2 garnet or jewel yams, cut into 1-inch cubes
3 tablespoons olive oil, divided
Salt and freshly ground black pepper to taste
1 onion, sliced
3 cloves garlic, minced
1 bunch kale, torn into bite-sized pieces
2 tablespoons red wine vinegar
1 teaspoon chopped fresh thyme

1/4 cup whole cloves garlic, peeled
1 yellow onion, sliced
1 bunch green kale, tough stems removed and leaves cut into 1/2-inch strips
2 tablespoons red wine vinegar
1/2 teaspoon dried thyme
