ROASTED VEGGIE TACOS WITH CREAMY CILANTRO SAUCE

Roasted Veggie Tacos with Creamy Cilantro Sauce image

Extra easy roasted veggie tacos recipe featuring flavorful roasted vegetables, hearty black beans, and a delicious five minute creamy cilantro sauce. Use whatever vegetables are in season, just remember to cut them into similar sized chunks before roasting so that they cook evenly. The creamy cilantro sauce can also be made ahead of time. Store it up to a week in the refrigerator. In addition to topping tacos, use it as a salad dressing or drizzle over meats. If you are vegan, we have shared an alternative (and delicious) sauce in the notes section below.

Time 45m

Yield Serves 6 (2 medium tacos each)

Number Of Ingredients 15

1 medium zucchini, cut into 1/4-inch pieces
1/2 medium red onion, peeled and cut into 1/4-inch pieces
1 red bell pepper, deseeded and cut into 1/4-inch pieces
10 cherry tomatoes, halved
2 teaspoons chili powder, we recommend our homemade chili powder
Salt to taste
1 tablespoon olive oil
1 (15-ounce) can black beans, drained and rinsed or 1 1/2 cups cooked black beans
12 medium or 24 small corn or flour tortillas
1 medium avocado, cut into cubes Pickled red onions, optional (see our quick pickled onions recipe)
1/2 cup sour cream (or use tahini for vegan sauce)
2 tablespoons fresh lime juice
1/2 jalapeño, seeds and membrane removed
1/2 cup packed cilantro leaves and tender stems
Salt to taste

Steps:

  • Heat the oven to 425 degrees Fahrenheit. Line a large low sided baking sheet with parchment paper or foil.
  • Place zucchini, onion, bell pepper, and tomatoes onto the baking sheet. Drizzle with olive oil. Scatter three quarters of a teaspoon of chili powder and a few pinches of salt over the vegetables. Toss to coat.
  • Roast the vegetables, stirring occasionally, until tender, about 25 minutes.
  • About 5 minutes before the vegetables are done, toss the black beans along with the remaining 1/4 teaspoon of chili powder and a light drizzle of olive oil onto the baking sheet with vegetables. Continue to roast until the beans are hot and vegetables done.
  • Add sour cream, lime juice, jalapeño, cilantro, and a pinch of salt to a blender. Blend until smooth. Taste then add more lime juice or salt if needed. Refrigerate up to a week.
  • Wrap tortillas, in two stacks, with aluminum foil. Place into the oven for 10 to 15 minutes, or until heated through.
  • Fill each warmed tortilla with vegetables and black beans. Top with avocado, pickled onions, and a drizzle of the cilantro sauce. Serve with extra sauce on the side.

For the spices:
1 ½ teaspoons cumin
1 ½ teaspoons coriander
1 ½ teaspoons turmeric
¾ teaspoon garlic powder
½ teaspoon dried oregano
Optional: ¼ teaspoon cayenne
½ teaspoon salt
Freshly ground black pepper
For the veggies:
1 head cauliflower, cut into florets (about 3-4 cups cauliflower florets)
1 medium sweet potato, diced into ½ inch cubes
1 red bell pepper, cut into chunks
1 red onion, cut into chunks
Optional: 1 cup frozen or fresh corn
2 tablespoons olive or avocado oil
½ medium lime, juiced
For the black beans:
1 (15 ounce) can black beans, rinsed and drained
For serving:
8 tortillas of choice, charred for serving (I love soft corn tortillas!)
1 avocado, sliced or diced
Sliced red cabbage, for crunch
Jalapeno cashew cream sauce (DF, V)
OR Cilantro yogurt sauce
Fresh chopped cilantro

Steps:

  • First, make whatever sauce you are choosing to go with this recipe to save you time and so you are ready when it's time to eat. More in my note section below. The recipes are linked in the ingredients and can be found in the post itself and in the note section too!
  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper. Depending on the size of your sheet pan, you may need to use two pans in order to fit all of the veggies.
  • In a small bowl, mix together all of the ingredients for the spices so they are well combined: cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt and pepper.
  • Add the cauliflower florets, diced sweet potato, red bell pepper, red onion, and corn (if using) to the prepared pan. Drizzle with avocado oil and lime juice. Sprinkle spices all over the veggies. Use a tong or clean hands to combine all the veggies so they are well coated with the spices and oil. I find that using hands is much easier!
  • Roast the veggies for 30-40 minutes, stirring halfway through. You'll know they are done when sweet potatoes are fork tender. During the last 5-10 minutes of baking, remove the pan from the oven and add the rinsed and drained black beans right to the sheet pan with the veggies. This is simply to warm the beans in the oven without needing to use another pot or bowl!
  • Serve on charred tortillas with my favorite jalapeno cashew cream sauce, a little red cabbage for crunch, avocado slices and cilantro. Enjoy! Serves 4, 2 tacos each.

When Shannon Koene of Blacksburg, Virginia tried making one vegetarian dish a week, her husband often noted, "it would've been better with meat in it." But he doesn't even miss the meat in these tacos, now a mainstay.

Tips:

  • Choose firm vegetables: To ensure crisp-tender roasted veggies, select firm vegetables like broccoli, cauliflower, carrots, and bell peppers.
  • Cut veggies uniformly: Cut the vegetables into similar-sized pieces so they roast evenly. Smaller florets or cubes will cook faster than larger ones.
  • Season generously: Don't be shy with the seasonings! A blend of chili powder, cumin, paprika, garlic powder, and salt will add depth of flavor to the veggies.
  • Roast at high heat: Roasting the vegetables at a high temperature (425°F) will help them caramelize and develop a golden-brown color.
  • Toss halfway through: To ensure even roasting, give the veggies a good toss halfway through the cooking time.
  • Don't overcrowd the pan: Make sure there's enough space between the vegetables on the baking sheet so they can roast properly.

Conclusion:

This roasted veggie taco skillet is a quick, easy, and delicious meal that's perfect for busy weeknights. With its vibrant colors, savory flavors, and customizable toppings, this dish is sure to be a hit with the whole family. So gather your ingredients, preheat your oven, and get ready to enjoy a tasty and nutritious meal that's also a visual delight!
