FOREVERMAMA'S ROASTED SUGAR SNAP PEAS WITH THYME

Forevermama's Roasted Sugar Snap Peas With Thyme image

These sugar snap peas are one of our favorite side dishes. They go very well with different meats such as beef, poultry and even fish. They are also very delicious on their own, which I often eat for a light lunch. The best results are achieved when using fresh. I've used frozen and it is very good, but not to the same level as the fresh.

Time 22m

Yield 6 serving(s)

Number Of Ingredients 7

1 lb sugar snap pea, fresh
2 tablespoons extra virgin olive oil
1/3-1/2 cup finely diced onion (very finely diced)
2 teaspoons dried thyme
kosher salt
freshly grated black pepper
1/2 teaspoon sugar (optional)

Steps:

  • Preheat oven to 425 degrees F.
  • Remove and discard the stem end and the string from each pod. (If this is not removed, you will find yourself having to spit it out when chewing, so you want to make sure to remove it).
  • Rinse pods under cold running water. Pat dry.
  • Spread sugar snap peas in a single layer on a cookie sheet (that have ridges). Sprinkle with the olive oil, finely diced onion, and thyme.
  • Season with salt and black pepper. Sprinkle with sugar if necessary. (The sugar addition is only needed if the sugar snaps are not in season and lack natural sweetness. Adding the sugar is all a matter of taste).
  • Bake for approximately 10-12 minutes in the preheated oven, until tender crisp.

ROASTED SUGAR SNAP PEAS

Roasted Sugar Snap Peas image

In our CSA box this week we received close to two pounds of sugar snap peas. I've been searching online for recipes to use them. (Usually we end up eating most of the snap peas out of the bag the first day or two or add raw to salads.) This time around I wanted to try a different method of preparing. I divided the snap peas in...

Categories     Vegetable Appetizers

Time 30m

Number Of Ingredients 5

2-3 c sugar snap peas, ends trimmed or not
2 Tbsp olive oil, or other oil depending on what seasonings you choose
1-2 tsp seasoning of choice, or more, to taste (cajun, mexican, italian, herbs de provence, advieh, etc.)
2-4 Tbsp freshly grated parmesan (optional)
1/2 tsp coarse salt, to taste

Steps:

  • 1. Note: the snap peas will not become crispy or crunchy like potato chips. If I ever figure out how that is done I will let you know! Preheat oven to 350 degrees. Line 1 or 2 jelly roll pans with parchment paper.
  • 2. In a large mixing bowl combine the snap peas, oil and seasoning of choice. Stir well to coat.
  • 3. Arrange the vegetables evenly and singly on the parchment paper. You may have to use 2 jelly roll pans to fit them all.
  • 4. Bake for 1/2 hour, turning the pan around and flipping the snap peas over after 15 minutes.
  • 5. Remove from pan and if using cheese, lightly grate over the snap peas and serve. Can be served hot or at room temperature.

Tips:

  • Choose Fresh Sugar Snap Peas: Select vibrant green, firm, and crisp sugar snap peas. Avoid any with blemishes or signs of wilting.
  • Prepare the Peas: Trim the ends of the sugar snap peas, removing any strings if necessary. This helps them cook evenly and makes them easier to eat.
  • Use High-Quality Olive Oil: Opt for extra virgin olive oil for its superior flavor and health benefits. It enhances the taste of the peas and adds a touch of richness.
  • Season Generously: Don't be shy with the seasonings. Salt, pepper, garlic powder, and smoked paprika are a classic combination that brings out the natural sweetness of the peas. You can also add a pinch of chili powder or cayenne pepper for a mild kick.
  • Roast at High Heat: Roasting the sugar snap peas at a high temperature (425°F) helps caramelize them slightly, giving them a delightful crispy-tender texture and amplifying their flavor.
  • Keep an Eye on the Peas: Roasting times may vary depending on the size and freshness of the peas. Keep an eye on them and adjust the cooking time if needed. Overcooked peas lose their vibrant color and crispness.
  • Serve Immediately: Roasted sugar snap peas are best enjoyed fresh out of the oven. Their flavors and textures are at their peak when served warm.

Conclusion:

Roasted sugar snap peas are an easy and delicious side dish that brings a pop of color and nutrition to any meal. With their sweet and slightly crunchy texture, they are a versatile vegetable that can be paired with various dishes. Whether you serve them as a healthy snack, a colorful addition to your salad, or a vibrant side to your main course, these roasted sugar snap peas are sure to impress. So, gather your ingredients, preheat your oven, and get ready to experience the delightful flavors of this simple yet satisfying recipe. Enjoy!
