1/2 c mayonnaise
2 lemons, zest finely grated
2 tsp paprika
1 tsp ground black pepper
1 tsp cayenne pepper
1/2 tsp adobo all purpose seasoning
1/2 tsp badia complete seasoning
4 (8 oz) boneless, skinless chicken breasts
basil, dried (optional)
oregano, dried (optional)

Steps:

  • 1. Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil.
  • 2. In a small bowl, whisk together the mayonnaise, lemon zest, paprika, pepper, adobo, complete seasoning, and cayenne.

8 chicken thighs, with skin, pierced all over with a small knife
5 cloves garlic, peeled
1 2-inch piece fresh ginger root, peeled
1 small jalapeño pepper, seeded, or cayenne to taste

2 tablespoons tomato paste
1/2 teaspoon salt, or to taste
1 teaspoon cumin powder
