Steps:
- Place the peppers directly on the burner of a gas stove over high heat or on a grill. Just as each section turns puffy and black, turn the peppers with tongs to prevent overcooking. (If you don't have a gas stove, place the peppers on a baking pan, and broil in the oven, turning as each side becomes charred.) Spread peppers on a baking sheet and let cool.
- When peppers are cool enough to handle, halve peppers crosswise and remove stems, ribs, and seeds; scrape away charred skin. Slice peppers into 1-inch-thick strips and transfer to a large bowl. Season with salt and pepper; toss to combine.
- Using the flat side of a large knife, crush garlic. Sprinkle garlic with salt and continue crushing with the flat side of the knife until a paste is formed. Add to bowl with peppers, along with capers and vinegar. Drizzle with olive oil and toss until well combined. Let salad stand at room temperature until ready to serve.
- To serve salad, season with salt and pepper and drizzle with more oil, if desired. Garnish with olives and basil.

Steps:
- Combine ruby Port, Sherry wine vinegar, sugar, cinnamon stick and nutmeg in heavy medium saucepan. Boil mixture over medium-high heat until sugar dissolves and mixture is reduced to 2/3 cup, stirring frequently, about 12 minutes. Transfer mixture, including cinnamon stick, to blender. With machine running, gradually add vegetable oil and blend well. Strain vinaigrette into small bowl. (Vinaigrette can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.)
- Char red bell pepper over gas flame or in broiler until blackened on all sides. Enclose pepper in paper bag. Let stand 10 minutes. Peel and seed pepper. Cut into thin strips. Combine bell pepper strips, greens and feta in bowl. Toss with dressing to coat. Divide among plates and serve.
Tips:
- To ensure the roasted red peppers are flavorful and smoky, select firm and ripe peppers. Broil them until charred but still slightly firm, as overcooking can make them mushy. - Enhance the flavor of the vinaigrette by using a good quality Port wine. A tawny or vintage Port will add depth and complexity, while a ruby Port will provide a fruitier taste. - Create a harmonious balance in the salad by selecting firm and flavorful cheese. Feta is a classic choice, but you can also experiment with goat cheese, Manchego, or Parmesan. - Elevate the salad's texture and flavor by incorporating roasted nuts or seeds. Toasted walnuts or pine nuts add a crunchy texture, while sunflower or pumpkin seeds offer a nutty flavor. - Experiment with different herbs to add a unique touch to the salad. Freshly chopped basil, oregano, or thyme can brighten the flavors and add a refreshing aroma. Conclusion:
This roasted red pepper salad with feta, Port, and spice vinaigrette is a delightful dish that combines vibrant flavors and textures. It begins with smoky roasted red peppers, which are complemented by creamy feta cheese, crunchy walnuts, and a tangy vinaigrette. The Port wine adds a subtle sweetness and complexity to the dressing, while the spices provide a touch of warmth and intrigue. The result is a salad that is both visually appealing and bursting with flavor. Whether served as a light lunch, a refreshing side dish, or an elegant appetizer, this salad is sure to be a crowd-pleaser. With its vibrant colors and harmonious flavors, it's a perfect choice for any occasion.
