Number Of Ingredients 8

5 eggs , separated
2 whole eggs
½ can artichoke hearts , drained, quartered if whole
1 whole roasted pepper from a jar or can drained, patted dry and roughly chopped
50g vegetarian Parmesan-style cheese
10 large basil leaves , shredded
1 tbsp butter
1 tbsp extra virgin rapeseed or olive oil

Tips:

  • For the best flavor, use ripe, red bell peppers. Roasting them brings out their natural sweetness and smokiness.
  • Don't overcrowd the pan when cooking the eggs. This will prevent them from cooking evenly.
  • If you like your eggs runny, cook them for a shorter amount of time. If you prefer them more well-done, cook them for a longer amount of time.
  • Serve the omelets immediately with your favorite toppings. Some suggestions include salsa, avocado, cheese, or sour cream.
  • Roasted red pepper omelets can be made ahead of time and reheated later. This makes them a great option for busy weeknights.

Conclusion:

Roasted red pepper omelets are a delicious and versatile breakfast option. They're easy to make and can be customized to your liking. Whether you like them simple or loaded with toppings, these omelets are sure to please. So next time you're looking for a quick and easy breakfast, give roasted red pepper omelets a try.
