Steps:
- Pour warm polenta into a large ovenproof skillet or a ceramic baking dish or metal baking pan and spread into an even layer (ideally about 1" thick). Let cool, then cover and chill at least 1 hour and up to 1 week.
- Preheat oven to 500°F. Heat garlic and ¼ cup oil in a large skillet over medium, stirring occasionally, until garlic is fragrant and starting to brown, about 3 minutes. Add beans and red pepper flakes (if using), then, working in batches, add kale, letting it wilt slightly after each addition before adding more, and cook, stirring occasionally, until tender and evenly darkened in color, about 3 minutes. Stir in vinegar and salt and cook, still stirring occasionally, until liquid evaporates, about 2 minutes. Remove from heat and stir in ¼ cup Parmesan.
- Scrape kale mixture over prepared polenta and spread into an even layer. Drizzle with more oil and sprinkle with more Parmesan.
- Transfer skillet to oven and bake until polenta is warmed through and topping is lightly crisped and browned, 8-10 minutes.

Steps:
- PORK
- Rub the pork with 1 Tablespoon salt and pepper, a teaspoon of paprika, and one of the smashed garlic cloves. Place in a plastic zip bag or plastic storage container. Store in the fridge overnight or a for a few hours before cooking.
- Preheat oven to 300 degrees. Using a sharp knife, score fat (but not meat) on pork in a diamond pattern. Pulse herbs and the rest of the garlic in a food processor until combined. Slowly add oil and continue pulsing until a thick paste forms. Stir in 1 Tablespoons salt, 1 Tablespoon pepper; rub mixture all over pork.
- Place the onion slices in a foil lined roasting pan or large Dutch oven. Place pork, fat-side up, on top of the onion halves; add 1 1/2 cups water to bottom of the pan. Drizzle a little bit of olive oil (about 1 Tablespoon) on top of the pork. Cover with foil or lid (if in a Dutch oven) and roast until meat is starting to become tender, about 3 hours. Remove foil or lid and continue cooking until meat is fork-tender, 1 to 1 1/2 hours more. Cook 30 minutes per pound total, or until the internal temperature as measured with a meat thermoter is 160 F. Remove pork from the oven and allow to rest 15 minutes before pulling apart or cutting.
- Carefully transfer pork to a large bowl, leaving juices in pan. When cool enough to handle, use two forks to shred meat into bite-size pieces, discarding any large pieces of fat. Transfer shredded pork back to pot and toss with juices. If you prefer to serve in larger pieces as we did, transfer to a cutting board and slice your pork into desired thickness.

Tips:
- To ensure the pork is cooked evenly, use a meat thermometer to check that the internal temperature has reached 145°F (63°C) for medium-rare, 155°F (68°C) for medium, or 165°F (74°C) for well done.
- For a crispier pork skin, pat the pork dry with paper towels before roasting.
- Roast the pork on a wire rack set over a baking sheet to allow the air to circulate around the pork and help it cook evenly.
- Make sure to baste the pork with the carrot glaze every 20-30 minutes to keep it moist and flavorful.
- If you don't have time to make the carrot glaze, you can use a store-bought glaze or even just brush the pork with olive oil and sprinkle it with salt and pepper.
- Polenta is a great side dish for roasted pork because it is hearty and flavorful. To make polenta, simply bring water or broth to a boil, then whisk in polenta until it thickens.
- Green beans are another great side dish for roasted pork. To cook green beans, simply trim the ends and then boil them in salted water for 3-4 minutes, or until tender.
Conclusion:
Roasted pork with carrot glaze, polenta, and green beans is a delicious and satisfying meal that is perfect for a special occasion or a weeknight dinner. The pork is tender and flavorful, the glaze is sweet and tangy, the polenta is creamy and cheesy, and the green beans are crisp and refreshing. This dish is sure to please everyone at the table.
