Time 55m

Number Of Ingredients 6

4 medium sweet onions, ends removed, sliced about 1/4-inch thick
3 Tbsp olive oil
1 c heavy cream
1/4 c white wine
1/3 c parmesan cheese, fresh grated
salt and pepper

Steps:

  • 1. Preheat oven to 375. Take care not to disturb the onion slices. Keep them together and intact. Place them on a parchment lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 15 minutes.
  • 2. Meanwhile, in a small saucepan, bring cream and wine to a simmer, just until it gets bubbly around the edges. Remove from heat and set aside.
  • 3. Now remove the onions from the oven and very carefully transfer them to a shallow baking dish. Turn the oven up to 450. Slowly pour the cream mixture over the onions and sprinkle each with parmesan cheese.
  • 4. Cover the dish with foil and return to the oven for 20 minutes. Uncover and bake for 5 more minutes until onions get browned and caramelized.

Tips:

  • Choose the right type of onions: Sweet onions like Vidalia or Walla Walla onions work best for this recipe, as they have a milder flavor that will not overpower the other ingredients.
  • Roast the onions until they are tender and caramelized: This will bring out their natural sweetness and flavor. Roasting the onions also helps to reduce their bitterness.
  • Use a good quality Parmesan cheese: Freshly grated Parmesan cheese will give the sauce a richer flavor. Avoid using pre-shredded Parmesan cheese, as it often contains additives and fillers that can affect the taste.
  • Don't overcook the sauce: The sauce should be thick and creamy, but not too thick. Overcooking the sauce will make it grainy.
  • Serve theRoasted Parmesan Creamed Onions immediately: This dish is best served hot and fresh. Leftovers can be stored in the refrigerator for up to 3 days, but they may not be as creamy as when they were first made.

Conclusion:

Roasted Parmesan Creamed Onions are a delicious and versatile side dish that can be served with a variety of main courses. They are also a great way to use up leftover roasted onions. With just a few simple ingredients and a little bit of time, you can create a dish that is sure to impress your family and friends.
