Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

4 (8 ounce) fish fillets, such as red snapper
kosher salt & freshly ground black pepper
8 ounces creme fraiche (found in the dairy section)
3 tablespoons Dijon mustard
1 tablespoon whole grain mustard
2 tablespoons shallots, minced
2 teaspoons capers, drained
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Line a sheet pan (with sides) with parchment paper. You can also use an ovenproof baking dish. Just make sure you use one large enough so the fish won't be crowded. If you crowd the fish, it won't cook in the directed time.
  • Place the fish fillets, skin side down, on the prepared pan and sprinkle generously with salt and pepper.
  • Combine the creme fraiche, two mustards, shallots, capers, 1 t. salt and 1/2 t. pepper in a small bowl. Mix well.
  • Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered.
  • Bake for 10 to 15 minutes, depending on the thickness of your fish, until it is just done. The fish will flake easily, using a fork, at the thickest part when it is done. Be sure not to overcook it!
  • Serve the fish fillets with the sauce from the pan spooned over the top.

2 large garlic cloves, chopped
1/4 cup chopped fresh parsley
1 tablespoon anchovy paste
2 teaspoons Dijon mustard
1 cup good mayonnaise
1 tablespoon grated lemon zest (2 lemons)
3 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
3 pounds striped bass steaks, 3/4 to 1 inch thick, cut into 6 portions
1/2 cup chopped scallions, white and green parts (4 scallions)
2 tablespoons good olive oil
3 tablespoons drained capers
Lemon wedges, for serving

Steps:

Time P2DT15m

Yield 10 servings

Number Of Ingredients 8

3 pounds fresh salmon, center cut
1 large bunch of dill, plus 1/4 cup chopped dill for serving
1/2 cup kosher salt
1/2 cup sugar
2 tablespoons white peppercorns, crushed
1 tablespoon whole fennel seeds
Pumpernickel bread, for serving
Mustard Sauce, recipe follows

Steps:

  • Cut the salmon in half crosswise and place half the fish skin side down in a deep dish. Wash and shake dry the dill and place it on the fish. Combine the salt, sugar, crushed peppercorns, and fennel seeds in a small bowl and sprinkle it evenly over the piece of fish. Place the other half of salmon over the dill, skin side up. Cover the dish with aluminum foil. Place a smaller pan on top of the foil and weight it with some heavy cans. Refrigerate the salmon for at least 2 and up to 3 days, turning it every 12 hours and basting it with the liquid that collects.

With a long thin slicing knife, slice the salmon in long thin slices as you would for smoked salmon. Serve with dark pumpernickel bread and mustard sauce. • 1 teaspoon ground dry mustard
  • 3 tablespoons sugar
  • 2 tablespoons white wine vinegar

BAREFOOT CONTESSA'S MUSTARD HORSERADISH SAUCE

Barefoot Contessa's Mustard Horseradish Sauce image

Saw this on the Contessa's show on the Food Network last night. She serves it with a standing rib roast. I think it has many possibilities, perhaps as a base for a dip with chipped beef? The whole-grain mustard adds great texture. I made this for Christmas to go with Recipe #95534 ("da Best" Chicago-style Italian Beef) and it was a heavenly combination. This made a lot so I took one and a half cups of the sauce, added about one cup of shredded sharp cheddar cheese and 3 chopped hard-boiled eggs. It was a lovely dip for crackers.

MUSTARD ROASTED FISH

MUSTARD ROASTED FISH image

Number Of Ingredients 6

4 8 oz fish fillets (red snapper, cod)
8 oz creme fraiche
3 Tbs dijon mustard
1 Tbs whole grain mustard
2 Tbs minced shallots
2 tsp drained capers

Steps:

  • 1. Preheat oven to 425 degrees 2. Line sheet pan with parchment paper (or use ovenproof baking dish) 3. Place fish filets skin side down on the sheet pan. Sprinkle generously with S&P 4. Combine creme fraiche, mustards, shallots, capers, 1 tsp salt and 1/2 tsp pepper in a small bowl. 5. Spoon sauce evenly over fish. Make sure fillets are completely covered. 6. Bake 10-15 minutes, depending on thickness of fish. 7. Serve hot or at room temp with pan sauce spooned over top.

Tips:

  • Choose the right fish: Firm-fleshed fish like salmon, halibut, or cod are best for roasting. Avoid delicate fish like sole or flounder, as they will fall apart during cooking.
  • Roast the fish at a high temperature: This will help to create a crispy skin and juicy flesh. Roasting the fish at a lower temperature will result in dry, overcooked fish.
  • Use a flavorful marinade: Marinating the fish before roasting will help to add flavor and moisture. A simple marinade made with olive oil, lemon juice, herbs, and spices is all you need.
  • Roast the fish on a bed of vegetables: This will help to prevent the fish from sticking to the pan and will also add flavor to the dish. Vegetables such as carrots, celery, and onions are good choices.
  • Baste the fish with the marinade or sauce during cooking: This will help to keep the fish moist and flavorful. You can also use a basting brush to brush the fish with melted butter or olive oil.
  • Cook the fish until it is opaque and flakes easily with a fork: Overcooked fish is dry and tough, so it is important to cook it until it is just done. Insert a fork into the thickest part of the fish to check for doneness.

Conclusion:

Roasted fish in a mustard sauce is a simple yet delicious dish that is perfect for any occasion. The crispy skin, juicy flesh, and flavorful sauce make this dish a winner. With a few simple tips, you can create a restaurant-quality roasted fish dish at home.
