Time 45m

Yield 4 to 6 servings

Number Of Ingredients 8

2 1/2 pounds carrots, peeled and quartered lengthwise
2 tablespoons olive oil
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
3/4 cups crumbled Bulgarian feta cheese
2 tablespoons extra virgin olive oil
1 tablespoon za'atar, or more to taste
1/4 cup chopped fresh parsley or cilantro leaves

Steps:

  • Preheat oven to 425 degrees. To roast carrots, place the carrots, olive oil, salt and pepper on a baking sheet, toss well and transfer to the oven. Roast, shaking occasionally until they are just beginning to brown, about 30 minutes. The carrots should be firm and not mushy. When they are cool enough to handle, cut the carrots in angled 1-inch slices. Transfer to a serving bowl. Add the remaining ingredients and toss well. Serve immediately or cover and refrigerate up to 4 hours.

  • To prevent the carrots from burning, toss them with olive oil and coat them evenly.
  • Roast the carrots at a high temperature (400°F) for 20-25 minutes, or until they are tender and slightly caramelized.
  • Sprinkle the carrots with zaatar spice blend before serving for a flavorful and aromatic touch.
  • Feel free to adjust the amount of zaatar spice blend to your preference. You can also add other spices or herbs, such as cumin, coriander, or rosemary.
  • Serve the roasted carrots as a side dish or as a snack. They are also a great addition to salads, wraps, and grain bowls.

Conclusion:

Roasted carrots with zaatar are a simple yet delicious side dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. With their sweet and savory flavor, roasted carrots with zaatar are sure to be a hit at your next gathering.
