2 tablespoons sugar
10 slices bacon
2 tablespoons white wine vinegar
1 tablespoon olive oil
2 cloves garlic, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup pitted kalamata olives, coarsely chopped
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh thyme leaves

Steps:

  • Heat oven to 450°F. In large roasting pan, toss Brussels sprouts, cauliflower, 1/4 cup oil and the sugar. Spread vegetables in single layer.
  • Roast uncovered 45 to 48 minutes, stirring after 30 minutes, until vegetables are tender and browned.
  • Meanwhile, in 12-inch skillet, cook bacon over medium-high heat 15 minutes or until crisp; drain on paper towels. Crumble bacon; set aside. Transfer 2 tablespoons bacon drippings to small bowl; stir in vinegar, 1 tablespoon oil, the garlic, salt and pepper.

2 pounds Brussels sprouts, trimmed
Extra-virgin olive oil
Kosher salt
Pinch of red pepper flakes
1/3 cup pine nuts
6 ounces slab bacon, cut into lardons
Parmigiano-reggiano, for topping

Steps:

  • Preheat the oven to 400 degrees F. Cut the Brussels sprouts in half lengthwise, from top to bottom. Toss the sprouts with olive oil, 1/2 teaspoon salt and the red pepper flakes on a baking sheet. Put in the oven and roast until tender, about 20 minutes. Toast the pine nuts on a separate baking sheet in the oven for the last 5 minutes of roasting the sprouts.
  • While the sprouts are roasting, put the bacon in a small saute pan with a splash of olive oil and bring the pan to medium heat. Cook the bacon until crispy, 7 to 8 minutes. Remove from the pan.

2-med. heads of cauliflower
1/4 c olive oil
2 Tbsp sugar
10 slice bacon, cooked & crumbled
2 Tbsp white wine vinegar

1 tsp salt
1/2 tsp pepper
3/4 pitted kalamata olives, coarsley chopped
1 Tbsp chopped fresh parsley
1 tsp chopped fresh thyme

  • 1. Preheat oven to 450 degrees. Rinse brussel sprouts thoroughly; remove any discarded leaves. Trim stem ends; cut in half lengthwise.
