1 boneless pork shoulder butt roast (3 to 4 pounds)
1 medium onion, chopped
1 cup water
1 cup sweet-and-sour sauce
1/4 cup sherry or chicken broth
1/4 cup reduced-sodium soy sauce
1 envelope onion soup mix
1 tablespoon minced fresh gingerroot
3 garlic cloves, minced
16 flour tortillas (6 inches), warmed
4 cups shredded cabbage
1/4 cup minced fresh cilantro

Steps:

  • Place roast and onion in a 6-qt. slow cooker. In a small bowl, whisk water, sweet-and-sour sauce, sherry, soy sauce, soup mix, ginger and garlic until blended; pour over pork. Cook, covered, on low until meat is tender, 6-8 hours., When cool enough to handle, shred pork with 2 forks. To serve, spoon about 1/3 cup pork mixture onto the center of each tortilla. Top with 1/4 cup cabbage; sprinkle with cilantro. Fold bottom of tortilla over filling; fold both sides to close.

3 tablespoons granulated garlic
4 tablespoons menudo spice mix
5 tablespoons red chile powder

12 to 16 pounds bone-in pork butt

  • Preheat the oven to 225 degrees F.
  • In a medium bowl, combine salt, pepper, granulated garlic, menudo spice mix, chile powder, cumin and brown sugar until well mixed. Place pork butt in large roasting pan, fat-side up. Rub the spice-and-brown sugar mixture all over the pork butt with lots of love! Cover the roasting pan with foil, being sure it is airtight. Roast for at least 12 hours; don't rush it! 5 pounds bone-in pork roast
8 cloves garlic, peeled and cut in half
¼ cup water
3 tablespoons brown sugar
1 (10 ounce) jar maraschino cherries, with juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Rinse and pat dry the pork roast.
  • Cut deep slits all over the roast with a sharp knife to different depths. Press pieces of garlic into the slits. 2 teaspoons ground cumin
1 teaspoon ancho chile powder
1 teaspoon brown sugar
2 1/4 teaspoons kosher salt, divided
2 pork tenderloins (about 1 pound each)
1 1/2 pounds brussels sprouts, trimmed, quartered
1 large red onion, halved, cut into 1/2-inch-thick wedges
1 delicata squash, halved lengthwise, seeded, sliced into 1/4-inch half moons
4 tablespoons vegetable oil, divided
3/4 cup sour cream
1/2 cup cilantro, finely chopped, plus whole leaves for serving

Prep time includes browning the roast, this is started on top of the stove then finished cooking in the oven --- the exact amounts really do not matter for this recipe I just eyeball all ingredients, start with 1/3 cup brown sugar and add in more if needed while cooking, when I make this I find that for my taste I need more than 1/3 cup --- the cayenne was left as optional if you like some heat then add it in and adjust to taste or you may used crushed chili flakes, there is tons of sauce to this so there is no need to double the amounts --- cooking time is only estimated it will depend on the size of your roast, this will also work well using a pork roast.

1 (3 -4 lb) boneless beef chuck roast

1 red bell pepper, cut into 1/2-inch pieces
1/2 cup caribe* (crushed New Mexico red chiles)
1 cup honey
1/2 cup fresh lime juice
1 teaspoon salt
1/4 cup chopped fresh cilantro

  • Prepare pork loin:
  • Preheat oven to 400°F.
  • Coarsely crush coriander seeds with a mortar and pestle or an electric coffee/spice grinder, then stir together with bread crumbs, oil, pepper, and salt in a small bowl.
