HORSERADISH POT ROAST
We tasted a dish similar to this while at a horseradish festival in Illinois. I like to serve it over noodles. The recipe is easily adaptable for stovetop cooking, too. -Barbara White, Katy, Texas

Tips:
- Choose the right cut of beef: Look for a well-marbled roast with a good amount of fat. This will help keep the beef moist and flavorful during cooking.
- Season the beef generously: Use a combination of salt, pepper, and herbs to season the roast before cooking. This will help develop a delicious crust and enhance the flavor of the beef.
- Roast the beef at a low temperature: This will help ensure that the beef cooks evenly and remains tender. Roast the beef at 325°F for about 25-30 minutes per pound.
- Let the beef rest before carving: Once the beef is cooked, let it rest for 10-15 minutes before carving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful roast.
- Make sure the potatoes are cooked through: Pierce the potatoes with a fork to check if they are tender. If the fork goes through easily, the potatoes are done.
- Serve the roast beef and potatoes immediately: This dish is best enjoyed hot out of the oven. Serve with a side of horseradish sauce and your favorite vegetables.
Conclusion:
This roast beef with horseradish potatoes is a classic dish that is perfect for a special occasion meal. The beef is tender and flavorful, and the potatoes are creamy and delicious. This dish is sure to impress your guests and is a great way to celebrate any special occasion.
