This rump roast in mushroom soup and beef broth is tender and very moist. It's made in the slow cooker, and is very easy to make. Raw vegetables, such as carrots and potatoes, may be added at the start of the cooking time, if desired. My whole family loves this recipe. The leftovers also make great roast beef sandwiches.

Tips:

  • Opting for a tougher cut of beef like chuck roast or top sirloin will impart more flavor due to their higher connective tissue content.
  • Ensure meat is at room temperature prior to searing to promote even cooking.
  • Sear the meat in a screaming hot pan with minimal oil to achieve a beautiful crust and lock in the juices.
  • Roast the meat uncovered in the oven to maximize browning and caramelization.
  • Use a meat thermometer to accurately gauge the internal temperature of the roast, removing it from the oven when it reaches your desired doneness.
  • Let the meat rest for 15-20 minutes before slicing to allow the juices to redistribute, resulting in a more tender and flavorful roast.
  • Deglaze the roasting pan with beef broth or red wine to extract the flavorful browned bits, forming the base of a rich and savory sauce.
  • Add sliced mushrooms and shallots to the sauce and cook until softened, infusing them with the pan drippings.
  • Incorporate a splash of bourbon to deglaze the pan once more, adding depth and complexity to the sauce.
  • Finish the sauce with cream or butter for a luscious and velvety texture.
  • Experiment with different types of mushrooms like cremini, shiitake, or oyster for a variety of flavors and textures.
