  • Choose Fresh Chicken Livers: Fresh chicken livers are essential for this recipe. They should be plump and have a deep red color. Avoid any livers that are bruised or discolored.
  • Soak the Chicken Livers in Milk: Soaking the chicken livers in milk helps to remove any bitterness and makes them more tender. Be sure to soak them for at least 30 minutes.
  • Use a Heavy Skillet: A heavy skillet will help to evenly distribute the heat and prevent the chicken livers from burning.
  • Cook the Chicken Livers in Batches: Do not overcrowd the skillet when cooking the chicken livers. Cook them in batches to ensure that they cook evenly.
  • Season the Chicken Livers Generously: Do not be afraid to season the chicken livers generously. This will help to enhance their flavor.
  • Cook the Chicken Livers Until They Are Just Cooked Through: Overcooking the chicken livers will make them tough and dry. Cook them until they are just cooked through, about 5 minutes per side.
