This recipe came from my friend Amanda, who loved to cook for us when we were roommates in college. This is another simple and delicious recipe- definitely a great comfort food!

3 -4 chicken breasts
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1 (1/4 lb) package Ritz cracker
1/2 cup butter or 1/2 cup margarine
salt and pepper

Steps:

  • Mix sour cream and soup in a bowl, place inside the refrigerator.
  • Boil chicken breasts until tender; drain and let stand 10 minutes or until cool enough to handle.
  • Spread cubed chicken evenly over the bottom of a sprayed 9X13 casserole dish.
  • Salt and pepper chicken to taste.
  • Remove sour cream and soup mixture from refrigerator and spread over the chicken in the casserole dish.
  • Crush Ritz crackers inside of its plastic sleeve and then spread evenly over the casserole.
  • Spoon melted butter over the top of all.
  • Bake at 350°F until golden brown and bubbling, approximately 20-30 minutes.
  • Enjoy.

I have had several variations of chicken casserole but this one beats the band! I just experimented until it was what my family liked. You will see how it differs and how rich and creamy it is by adding just a few more ingredients. Rice makes it go farther. Makes enough to feed 10 people with leftovers! You can add water chestnuts or slivered almonds to add crunch. Cooking time does not include time to boil boneless chicken breasts. Looks delish!!! No calories skimped on here.

5 -6 boneless chicken breasts or 1 whole chicken, roasted
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of chicken soup
8 ounces sour cream
4 cups cooked rice (approx.)
2 (36 count) sleeves Ritz crackers, crumbled
1 cup margarine

Steps:

  • If using boneless breasts, boil just until cooked through. Do not overcook as chicken will be tough. If using whole roasted chicken, just shred meat.
  • Mix two kinds of soup and sour cream with chicken. Add in rice.
  • Spread mixture into 9x13 baking dish sprayed with Pam.
  • Melt margarine and mix with cracker crumbs. Spread cracker mixture evenly onto chicken mixture.
  • Bake at 350 for 30 minutes or until bubbly. Do not overcook. I serve with greenbeans, rolls and nice southern iced tea!

16 OZ. SOUR CREAM
1 CAN CREAM MUSHROOM OR CREAM CHICKEN SOUP
2 TUBES RITZ CRACKERS
2~ 2 1/2 CUPS GRATED CHEDDAR CHEESE
SALT AND PEPPER TO TASTE

Steps:

  • PREHEAT OVEN TO 350 DEGREES. LAYER DISH ( 10 X 13 )GIVE OR TAKE AN INCH,UNGREASED, WITH ONE TUBE CRUMBLED RITZ CRACKERS.DRAIN CHICKEN ( IF CANNED )CRUMBLE INTO SMALLER PIECES AND MIX WITH SOUP, SOUR CREAM, AND SALT & PEPPER IN A LARGE BOWL. SPOON THIS MIXTURE ON THE TOP OF THE RITZ CRACKERS AND SPREAD EVENLY. THEN SPREAD THE GRATED CHEESE ON TOP OF THE CHICKEN, AND TOP WITH THE SECOND TUBE OF CRUMBLED RITZ CRACKERS. BAKE APPROXIMATELY 30 MINUTES, UNTIL MIXTURE IS WARM, CHEESE IS MELTED, AND CRACKERS ARE A LITTLE TOASTY.

1 chicken's worth shredded meat (I used a rotisserie chicken from the grocery store)
2 cans cream of chicken soup (we actually ended up using three)
Approx. 3/4 container of sour cream (you could use a whole container instead and just not use 3 cans of cream of chicken soup)
Approx. 1 1/2 sticks of butter
1 package Ritz crackers, crushed (Note: by package I do NOT mean a whole box!)
Copious handfuls of shredded cheddar cheese (not pictured)

Steps:

  • Mix together the chicken, soup, sour cream, and cheese in a bowl. Pour the mixture into a baking pan and spread evenly. Add crushed Ritz crackers all over the top of the mixture. Melt butter completely; spoon over the top of the cracker crumbs. Bake in a 350° oven for about 35 minutes, or until casserole is heated through and the cracker topping is nice and crispy. Serve and hope your family/guests/loved ones don't devour it in one sitting =) Such a ridiculously simple recipe -- I can't believe I haven't made it sooner, but I have a feeling it will become a staple.
