HOMEMADE RICOTTA

Homemade Ricotta image

Provided by Ina Garten

Time 43m

Yield about 2 cups

Number Of Ingredients 4

4 cups whole milk
2 cups heavy cream
1 teaspoon kosher salt
3 tablespoons good white wine vinegar

Steps:

  • Set a large sieve over a deep bowl. Dampen 2 layers of cheesecloth with water and line the sieve with the cheesecloth.
  • Pour the milk and cream into a stainless-steel or enameled pot such as Le Creuset. Stir in the salt. Bring to a full boil over medium heat, stirring occasionally. Turn off the heat and stir in the vinegar. Allow the mixture to stand for 1 minute until it curdles. It will separate into thick parts (the curds) and milky parts (the whey).
  • Pour the mixture into the cheesecloth-lined sieve and allow it to drain into the bowl at room temperature for 20 to 25 minutes, occasionally discarding the liquid that collects in the bowl. The longer you let the mixture drain, the thicker the ricotta. (I tend to like mine on the thicker side, but some prefer it moister.) Transfer the ricotta to a bowl, discarding the cheesecloth and any remaining whey. Use immediately or cover with plastic wrap and refrigerate. The ricotta will keep refrigerated for 4 to 5 days.

Tips:

  • Choosing Fresh Ricotta Cheese: Opt for high-quality ricotta cheese that is fresh and creamy. Look for a brand that has a good reputation and check the expiration date to ensure freshness.
  • Preparing Herbs and Spices: Before adding herbs and spices to the ricotta mixture, make sure to chop or grate them finely. This will help to evenly distribute their flavor throughout the snack.
  • Creating Unique Flavor Combinations: Experiment with different herbs and spices to create unique flavor combinations. Some popular options include basil, oregano, thyme, garlic powder, onion powder, and paprika.
  • Adding a Touch of Sweetness: If you prefer a sweeter snack, consider adding a small amount of honey, agave nectar, or fruit preserves to the ricotta mixture.
  • Selecting Crackers or Bread: Choose crackers or bread that complement the ricotta mixture. Some popular options include water crackers, crostini, or pita bread. You can also use fresh vegetable slices, such as cucumbers or carrots, for a healthier alternative.

Conclusion:

These ricotta cheese snack recipes offer a delicious and versatile way to enjoy this creamy cheese. Whether you're looking for a quick and easy appetizer, a healthy snack for on-the-go, or a satisfying addition to your lunch or dinner, these recipes have something for everyone. With a few simple ingredients and a little creativity, you can create a variety of flavorful and satisfying ricotta cheese snacks that are sure to be a hit with your family and friends.
