Martha's recipe is adapted from one in Mexican food expert and chef Rick Bayless's book "Authentic Mexican."

Yield Makes about 1 quart

Number Of Ingredients 5

6 tablespoons long-grain white rice
1 1/4 cups whole blanched almonds
1 1-inch stick cinnamon
1 cup sugar
Large pinch of coarse salt

Steps:

  • The night before serving, pulverize the rice in a spice grinder. Transfer to a large bowl and add the almonds and cinnamon stick. Stir in 2 1/2 cups hot tap water, cover, and let stand for at least 6 hours.
  • Remove cinnamon stick and discard. Puree the mixture in a blender until no longer gritty, about 4 minutes. Add 2 cups water and blend for a few seconds more. Set a large sieve lined with 3 layers of dampened cheesecloth over a medium bowl. Pour the almond rice mixture in, a little at time, stirring gently to help the liquid pass through, and then gather up the corners of the cheesecloth and squeeze out all the liquid. Stir sugar and salt into the strained liquid. If the consistency is too thick, add water. Cover and refrigerate. Stir before pouring into glasses.

Categories     side-dish

Time 8h20m

Yield 8 servings

Number Of Ingredients 6

2 cups jasmine or long-grain white rice
1 large stick canela or 2 cassia cinnamon sticks (see Cook's Note)
1/2 cup sugar
Kosher salt
Ice, for serving
Ground canela or cinnamon, for sprinkling

Steps:

  • Grind the raw, unwashed rice in a blender on high speed into a fine powder. Transfer to a medium bowl and whisk in 5 cups room temperature water. Add the canela, cover and let it sit at room temperature for 8 hours and up to 24.
  • Removed the canela and snap into two 1-inch pieces. Vigorously whisk the rice mixture until the rice is evenly distributed. Transfer to a blender, add the reserved canela pieces and puree on high speed for 10 minutes; the mixture will get hot and the rice will soften and start to ''cook '' and release more flavor. Add the sugar and 3/4 teaspoon salt and puree until dissolved, about 30 seconds.
  • Strain the rice mixture through a fine mesh sieve lined with several layers of cheesecloth into a large bowl, pressing on the solids to extract as much liquid as possible (you should have about 3 1/2 cups). Reserve the solids for another use (like cream-of-rice porridge). Stir in 3 cups very cold water. Serve over ice with a sprinkle of ground canela or cinnamon on top.

HORCHATA

Time 3h45m

Yield 6 to 8 servings

Number Of Ingredients 4

1 cup long-grain white rice, rinsed
1 cinnamon stick, preferably Mexican, broken into pieces, plus more for garnish
1/2 cup sugar, or to taste
1 tablespoon ground cinnamon, preferably Mexican, for garnish

Steps:

  • Combine the rice and cinnamon stick with 4 cups water in a blender; pulse to coarsely grind. Transfer to a large bowl and add another 4 cups water; soak at room temperature for 3 hours.
  • Puree the rice mixture in a blender in batches until smooth. Strain through cheesecloth or a fine sieve into a pitcher. Mix in the sugar; chill.
  • Stir the horchata well before serving. Pour into ice-filled glasses; garnish with cinnamon sticks and a dusting of ground cinnamon.

Tips:

  • Use high-quality ingredients: Fresh, high-quality ingredients will result in the best-tasting horchata. Look for fresh cinnamon sticks, whole cloves, and high-quality rice.
  • Soak the rice overnight: Soaking the rice overnight helps to soften it and make it easier to blend. This will also help to reduce the cooking time.
  • Use filtered or distilled water: Tap water can contain minerals that can affect the taste of the horchata. Using filtered or distilled water will help to ensure that the horchata has a clean, refreshing taste.
  • Don't overcook the rice: Overcooking the rice will make the horchata thick and gummy. Cook the rice just until it is tender.
  • Chill the horchata before serving: Chilling the horchata before serving will help to enhance the flavors and make it more refreshing.

Conclusion:

Horchata is a delicious and refreshing drink that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. Whether you are looking for a refreshing drink to enjoy on a hot day or a festive beverage to serve at a party, horchata is a great choice. With its creamy texture, sweet flavor, and hints of cinnamon and vanilla, horchata is sure to please everyone.
