RICH FRENCH ONION SOUP
When entertaining guests, I bring out this savory soup while we're waiting for the main course. It's simple to make-just saute the onions early in the day and let the soup simmer until dinner-time. In winter, big bowls of it make a warming supper with a salad and biscuits. -Linda Adolph, Edmonton, Alberta

DORA'S RICH FRENCH ONION SOUP
This soup was first inspired by Mrs Weasley's onion soup that she serves to Harry upon his arrival at the Burrow soon after the end of his 5th year at Hogwarts. From that I looked at through my favourite old cookbook and adding some personal flare, created the best, thick, rich onion soup I have ever had.

- Ladle soup into oven safe bowl. Float slice(s) of bread on the soup and layer cheese over top.
- Bake on a cookie sheet until cheese melts and starts to brown.
Tips:
- Use a variety of onions. This will add depth and flavor to your soup. Yellow onions are a good all-purpose choice, but you can also use red onions for a sweeter flavor or white onions for a milder flavor.
- Caramelize the onions slowly and patiently. This is the key to getting a rich, flavorful soup. Don't rush the process, or the onions will burn.
- Use a good quality beef broth. This will also add flavor to your soup. If you don't have beef broth on hand, you can use chicken broth or vegetable broth.
- Add a splash of white wine. This will help to deglaze the pan and add a touch of acidity to the soup.
- Don't be afraid to experiment with different toppings. Croutons, grated Parmesan cheese, and chopped fresh parsley are all classic choices, but you can also try other things like bacon bits, crumbled blue cheese, or even a fried egg.
Conclusion:
Onion soup is a classic French dish that is perfect for a cold winter day. It is rich, flavorful, and comforting. With a few simple ingredients and a little bit of time, you can make a delicious onion soup that your family and friends will love. So next time you're looking for a warm and hearty meal, give this recipe a try.
