RICE WITH CHORIZO, SHRIMP AND GREEN OLIVES

Rice With Chorizo, Shrimp and Green Olives image

This is a recipe from Food and Wine magazine. Chorizo is a Spanish pork sausage that packs a lot of flavor. Don't skimp there! The chorizo is cooked so that it crisps in it's own spiced and yummy fat. Then the rice is prepared in the same pot so it absorbs any fat left in the pan, which gives it great flavor. Enjoy!

FOIL-PACKET RICE WITH CHORIZO AND CHICKEN

Foil-Packet Rice with Chorizo and Chicken image

Frozen rice is a versatile shortcut ingredient and the key to these flavorful foil packs. The rice is layered in while still frozen to provide a buffer of time that keeps it from overcooking. As the rice thaws, the other ingredients start cooking and lightly char and then the rice can absorb all the bubbling liquids and rendering inside the pack.

Number Of Ingredients 13

4 cups frozen cooked white rice

2 tablespoons chopped fresh parsley

1/4 teaspoon saffron threads
3 tablespoons extra virgin olive oil
1/2 pound chorizo, peeled, in small chunks
1 3 1/2-pound chicken, cut up
Salt and freshly ground black pepper
1 medium onion, chopped
1 leek, white part only, chopped
1/2 cup sliced red bell pepper
1/2 cup sliced yellow bell pepper
6 ripe plum tomatoes, diced
1/2 cup dry white wine
1 tablespoon paprika, preferably Spanish smoked
3 cups short grain rice, preferably Spanish
1/4 pound green beans, trimmed, in 1-inch lengths
1/2 pound peeled medium shrimp
1/2 cup sliced Spanish pimento-stuffed olives

  • In a mortar or food processor, grind parsley, almonds and garlic to a paste. Set aside. Place stock in saucepan, add saffron, bring to simmer and remove from heat.
  • Heat oil in 17-inch paella pan, on two burners if necessary, or in two 13-inch pans. Add chorizo and saute until heated through. Remove from pan. Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in this dish. Look for plump, juicy shrimp, flavorful chorizo, and briny green olives.
  • Don't overcrowd the pan: When cooking the shrimp and chorizo, make sure to give them enough space in the pan so that they can cook evenly. If you overcrowd the pan, the ingredients will steam instead of sear, and you'll end up with bland, rubbery shrimp and chorizo.
  • Cook the shrimp and chorizo in batches: If you're cooking a large amount of shrimp and chorizo, you may need to cook them in batches. This will help to prevent overcrowding the pan and ensure that the ingredients cook evenly.
  • Add the rice and liquid: Once the shrimp and chorizo are cooked, add the rice and liquid to the pan. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and simmer for 18 minutes, or until the rice is tender and all of the liquid has been absorbed.
  • Fluff the rice: Once the rice is cooked, fluff it with a fork to separate the grains. This will help to make the rice light and fluffy.
  • Garnish and serve: Garnish the rice with chopped parsley, green onions, or cilantro. Serve immediately with your favorite sides, such as grilled vegetables, roasted potatoes, or a simple salad.

Conclusion:

This rice with chorizo, shrimp, and green olives is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of flavors and textures in this dish is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed.
