CUCUMBER SALAD WITH SOY, GINGER AND GARLIC
The trick to any sliced cucumber salad is to slice the cucumbers as thin as you can and to purge them by salting them before making the salad so the dressing doesn't get watered down by the cucumber juice.

Tips:
- Choose the right rice: For this salad, it's best to use a short-grain rice, such as sushi rice or arborio rice. These types of rice cook up fluffy and tender, and they hold their shape well in a salad.
- Cook the rice properly: Be sure to cook the rice according to the package directions. If you overcook the rice, it will become mushy and won't hold its shape well in the salad.
- Cool the rice completely: Before you add the rice to the salad, be sure to let it cool completely. This will help prevent the salad from becoming soggy.
- Use fresh, crisp vegetables: The vegetables in this salad should be fresh and crisp. If you use wilted or limp vegetables, the salad will not be as flavorful.
- Don't overdress the salad: A little bit of dressing goes a long way in this salad. If you add too much dressing, the salad will become soggy.
Conclusion:
This rice salad is a refreshing and flavorful side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own preferences. Experiment with different types of vegetables, herbs, and dressings to create a salad that you love.
