Steps:
- Cook rice with the following 3 ingredients.
- Add the rest of the ingredients to the cooked rice and mix well.
- Put in well greased cassarole dish.
- Bake for 1 hour at 350.
- You can substitute 3 cups of leftover cooked rice if you would like.
- If it is a little dry, just add about a 1/4 cup of apple juice to the mixture.
Tips:
- For a crispy rice kugel, use day-old rice. Freshly cooked rice will be too moist and will not hold its shape as well.
- To make sure the rice kugel is cooked through, insert a toothpick into the center. If it comes out clean, the rice kugel is done.
- If you don't have a 9x13 inch baking dish, you can use a smaller dish and simply adjust the cooking time. Just make sure that the rice kugel is at least 2 inches thick so that it cooks evenly.
- You can add your favorite mix-ins to the rice kugel, such as raisins, nuts, or dried fruit.
- Rice kugel can be served warm or cold. It is also a great make-ahead dish.
Conclusion:
Rice kugel is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover rice. With so many different variations, there is sure to be a rice kugel recipe that everyone will enjoy.
