**Wild rice**, a long-grain rice native to North America, is known for its nutty flavor and chewy texture. It is a popular ingredient in salads, soups, and pilafs. All three recipes are easy to follow and produce delicious, flavorful results.

**Basic Wild Rice**: This recipe is a great starting point for those who are new to cooking wild rice. It requires only a few simple ingredients: wild rice, water, salt, and butter. The rice is cooked in the rice cooker until it is tender and fluffy.

**Chicken and Vegetable Wild Rice**: This recipe is a complete meal in one pot. It includes chicken breasts, vegetables, and wild rice. The chicken is browned in a skillet before being added to the rice cooker along with the vegetables, wild rice, water, salt, and pepper. RICE COOKER PILAF WITH BROWN RICE, LENTILS, AND WILD RICE

Rice Cooker Pilaf With Brown Rice, Lentils, and Wild Rice image

This is a quick and easy pilaf with my favorite spice--cardamom! If you don't have cardamom on hand, you can omit it--the pilaf is still delicious without it. I improvised it one evening when I was short of canned chicken broth and time. I like the recipe because it combines two of my favorite rices with lentils. The lentils add protein. The dish is a perfect accompaniment to chicken baked with a generous sprinkling of cardamom.

Provided by Futtimanette

Categories     Brown Rice

Time 50m

Yield 3 1/2 cups, 4-6 serving(s)

Number Of Ingredients 8

1/2 onion, chopped
1 1/8 cups brown rice
1/4 cup lentils
1/8 cup wild rice
4 cups water
fresh ground pepper, to taste
1 teaspoon ground cardamom
3 teaspoons chicken bouillon granules

Steps:

  • Remove the inner pot from the rice cooker.
  • Place the rices and lentils in a sieve, rinse under running water.
  • Add the onion, the rices, and the lentils to the inner pot. Add the water, the pepper, the cardamom, and the chicken bouillon granules. Stir ingredients.
  • Return inner pot to rice cooker and press "cook." If pilaf is not sufficiently done after it switches from "cook" to "warm," re-close the rice cooker and keep on "warm" for another 5-10 minutes. Cooking time should be approximately 45 minutes, your rice cooker may vary.

CHICKEN AND WILD RICE SLOW COOKER DINNER

Chicken and Wild Rice Slow Cooker Dinner image

I found this on a card supplied at the butcher's counter at Harris Teeter Grocery. The only change I made was to omit the marjoram leaves due to personal preference but I've added it back to the recipe as an option here. If you don't have bone-in chicken breasts you can use bone-in chicken thighs (about 10 thighs or 3 1/2 lbs). Remember to remove the skin of the chicken and any really visible fat deposits.

Provided by HokiesMom

Categories     Chicken

Time 5h20m

Yield 6-8 serving(s)

1/2-1 teaspoon dried marjoram (optional)
1/2 teaspoon ground pepper
3 lbs bone-in skinless chicken breast halves, remove skin and visible fat from chicken

Steps:

  • In a large skillet, cook bacon until crispy. Add onion, celery and red bell pepper to skillet and cook & stir until tender.
  • Remove to a large bowl and blend the veggies/bacon mixture, water and all other ingredients (EXCEPT chicken) together.

SLOW COOKER MUSHROOM AND WILD RICE SOUP

Slow Cooker Mushroom and Wild Rice Soup image

Making creamy soups in the slow cooker can be tricky because it's not possible to simmer them with the top off and reduce the liquid. One easy way to thicken without reducing is to use a roux, a mix of flour and butter. Heat the roux in the microwave, then whisk it into the stock in the slow cooker before adding the other ingredients. (If you don't have a microwave, simply melt the butter in a small saucepan, stir in the flour, let it bubble, then proceed.) This soup is best prepared on the high setting for two reasons: First, when cooked on low, the wild rice becomes too soft before the mushrooms are tender. Second, the roux doesn't thicken as effectively on low. If you need a longer cook time, omit the rice, put the soup on low for 8 hours, and turn the heat up to high before serving. Cook the rice separately according to package directions, then stir it in before serving. Find a pressure cooker version of this recipe here.

Categories     dinner, soups and stews, main course

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 15

4 tablespoons unsalted butter (1/2 stick)
1/4 cup all-purpose flour
5 cups vegetable or chicken stock, plus more as needed
1/4 cup dry white wine (see Tip)
2 pounds mixed mushrooms (such as cremini and shiitake), tough stems removed, chopped into 1/2- to 1-inch pieces
1 cup wild rice (about 6 ounces)
2 celery stalks, finely chopped
1 small yellow or red onion, grated or minced
1 large carrot, peeled and finely chopped
6 garlic cloves, smashed and chopped
3 sprigs fresh thyme or 1 teaspoon dried thyme
1 teaspoon garlic powder
Kosher salt and black pepper
1/2 cup sour cream
Chopped scallions or chives and fresh dill, for topping

Steps:

  • Put the butter in a microwave-safe container (a liquid measuring cup works well) and microwave until the butter is completely melted, 30 seconds to 1 minute. With a fork, whisk the flour into the butter to make a smooth mixture the texture of cake batter, then microwave until the roux is steaming hot and bubbling slightly around the edges, about 30 seconds.
  • Scrape the roux into a 6- to 8-quart slow cooker and whisk in the stock and wine. Stir in the mushrooms, wild rice, celery, onion, carrot, chopped garlic, thyme and garlic powder. Season with 1 teaspoon salt and several generous grinds of black pepper. Cook on high until most of the rice grains are just slightly split open and the vegetables are tender, about 4 hours. (The soup can hold for 1 to 2 hours on the warm setting, but eventually the wild rice will overcook.)
  • Turn the heat to warm. Put the sour cream in a small bowl and slowly whisk in a few spoonfuls of the hot soup until smooth, then stir the mixture into the soup. (This prevents the sour cream from separating.) If you'd like the soup to be thinner, whisk in warm broth or water to the desired consistency. Taste the soup and add more salt and pepper to taste.
  • Divide the soup among bowls and top with chopped scallions or chives and dill. Reheat any leftovers on low until warm. (Boiling can cause the sour cream to break.)

Tips:

  • Use a good quality wild rice. Look for one that is plump and has a nutty aroma.
  • Rinse the wild rice thoroughly before cooking. This will help to remove any dirt or debris.
  • Use the correct ratio of water to rice. Too much water will make the rice mushy, while too little water will make it dry and hard.
  • Bring the water to a boil before adding the rice. This will help to prevent the rice from sticking to the bottom of the pot.
  • Cook the rice on low heat for the recommended amount of time. Do not stir the rice while it is cooking, as this will release starch and make it sticky.
  • Once the rice is cooked, let it stand for 5 minutes before fluffing it with a fork. This will help to separate the grains and prevent them from clumping together.

Conclusion:

Cooking wild rice in a rice cooker is a simple and convenient way to prepare this delicious and nutritious grain. By following the tips above, you can ensure that your wild rice turns out perfectly every time. So next time you're looking for a healthy and flavorful side dish, give wild rice a try!
