BLUE RIBBON MEAT LOAF

Blue Ribbon Meat Loaf image

I found this recipe in the early 70's and have never wavered in making it for my family. Now, my daughters make the same one for their little families. It's the best meat loaf I've ever tasted! Maybe it's the cheese?? :)

Provided by Diane Springs

Categories     Beef

Time 1h15m

Number Of Ingredients 11

2 eggs
2/3 c milk
2 tsp salt
3 bread slices
1 small onion, chopped fine
1/2 c shredded raw carrot
1 c shredded cheddar cheese
1 1/2 lb ground beef - pretty lean!
1/4 c brown sugar
1/4 c catsup
1 Tbsp prepared mustard

Steps:

  • 1. Break eggs in large mixing bowl. Add milk, salt and crumbled bread. Let set until bread is soft and disintegated. Add onion, carrot, cheese and beef. Mix well and pack in a loaf pan, OR a 9 x 13 cake pan.
  • 2. For the topping, mix brown sugar, catsup and prepared mustard together and spread on top of the meat loaf.
  • 3. Bake at 350 degrees for one hour. Let stand at least 10 minutes before serving. Enjoy!

Tips:

  • Choose the right ground beef. For a moist and flavorful meatloaf, use a blend of 80% lean and 20% fat ground beef. You can also use ground turkey or chicken, but the meatloaf will be less flavorful.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough. Just mix the ingredients until they are evenly combined.
  • Use a variety of seasonings. This will give the meatloaf flavor and depth. Some good options include garlic powder, onion powder, salt, pepper, and paprika.
  • Add some moisture to the meatloaf mixture. This will help to prevent the meatloaf from drying out. You can add moisture with eggs, milk, or tomato sauce.
  • Wrap the meatloaf in bacon. This will help to keep the meatloaf moist and flavorful. You can also wrap the meatloaf in parchment paper or aluminum foil.
  • Bake the meatloaf at a low temperature. This will help to prevent the meatloaf from drying out. The ideal baking temperature is 350 degrees Fahrenheit.
  • Let the meatloaf rest before slicing. This will help the meatloaf to hold its shape and prevent it from falling apart.
