CRUST
1 c unbleached all- purpose flour
1/2 c whole wheat flour
1 1/2 Tbsp sugar
1/2 tsp kosher salt
3/4 c chilled unsalted butter, cubed
1 large egg
1 Tbsp whole milk
FILLING
1/4 c cornstarch
4 1/2 c rubharb, cut into thick slices. aprox 6 stalks
6 oz fresh raspberries
1/3 c sugar
1 large egg, beated
1 tsp turbinado sugar

Steps:

  • 1. Filling: Dissolve cornstarch in 3 tablespoons water in a small bowl; set aside.
  • 2. Combine rhubarb, raspberries, and sugar in a large heavy saucepan. Cook over medium heat, stirring often, until sugar dissolves and juices are released, about 4 minutes.
  • 3. Stir in cornstarch mixture and bring to a boil (rhubarb will not be tender and slices will still be intact). Transfer to a bowl. Chill until cool, about 30 minutes.
  • 4. Preheat oven to 400°F Roll out dough on floured parchment paper to 12? round; brush with beaten egg. Mound filling in center of crust; gently spread out, leaving 1 1/2? border.
  • 5. Gently fold edges of dough over filling, pleating as needed. Brush border with egg; sprinkle with raw sugar. Slide parchment with crostata onto a large rimmed baking sheet and bake until crust is golden brown and filling is bubbly, about 45 minutes. Let crostata cool on baking sheet on a rack.
  • 6. Transfer crostata to a platter, cut into wedges, and serve with whipped cream or ice cream.

3 cups diced fresh rhubarb or sliced frozen rhubarb
2/3 cup sugar plus 3/4 cup sugar, divided
2/3 cup water
1 tablespoon butter
1/3 cup quick-cooking oats
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
1-1/2 cups heavy whipping cream
1-1/2 cups half-and-half cream
1 teaspoon vanilla extract

Steps:

  • Place rhubarb, 2/3 cup sugar and water in a small saucepan; bring to a boil, stirring occasionally. Reduce heat; simmer, until rhubarb is softened and mixture is thickened, 8-10 minutes. Cool completely., In a small skillet, melt butter over medium-high heat. Add oats, brown sugar and cinnamon; cook and stir until oats are coated, 45-60 seconds. Remove to a bowl; cool completely., In a bowl, whisk together both creams, vanilla and remaining sugar until sugar is completely dissolved. Fill cylinder of an ice cream maker no more than two-thirds full. Freeze according to manufacturer's directions. During the last 5 minutes of processing, add oat mixture, breaking up any large crumbles before adding., Transfer half of the ice cream to a 1-quart freezer container; drizzle with half of the rhubarb mixture. Using a knife, cut through mixtures in a zigzag pattern to swirl. Repeat with remaining ice cream and rhubarb. Freeze, covered, until firm, about 4 hours.

1 c flour
1 tsp baking powder
2 Tbsp margarine
1 egg, beaten
2 Tbsp milk
3 c rhubarb, diced
1 - 3 oz pkg red gelatin powder
TOPPING
3/4 c granulated sugar
1/2 c flour
1/2 c margarine
1/2 tsp cinnamon, ground

Steps:

  • 1. Combine 1 cup flour and baking powder. Cut in 2 T. margarine. Add beaten egg and milk. Press on to pizza pan.
  • 2. Cover with raw rhubarb. Sprinkle with red gelatin. Let set while preparing topping.
  • 3. Combine topping ingredients. Sprinkle topping over rhubarb.
  • 4. Bake at 350 degrees for 45 minutes. Cool. Cut into wedges.
