PINEAPPLE-RHUBARB PIE
This pie has a wonderful flavor and is unlike those on the site, it does not contain tapioca. It is an old recipe and is easily made. Using young rhubarb makes this recipe unbeatable in taste and texture. I am frequently asked for this recipe.

Rhubarb and Pineapple? YES! The sweetness of the pineapple really offsets the rhubarb in this delicious pie set in a creamy filling. Fresh pineapple works best, but canned will do the trick if it's all you have on hand. Hope you enjoy!

PINEAPPLE -RHUBARB PIE
Steps:
- Oil pastry Sift 2 cups flour, 3 teaspoons sugar, and 1 and one half teaspoons salt in a medium size bowl. Mix together,in a small bowl, 1 cup oil(I use vegetable) and 4 and one half tablespoons milk. Mix with a fork. Pour oil mixture over flour mixture until all mixture is moistened. Reserve one-third for the top of the pie. Press remaining dough against the bottom and sides of a 9 or 10 inch pie pan. Flute edges. Fill with fruit filling. For top "crust" crumle remaining dough over filling. Bake as directed in fruit recipe. Drain the liquid from the rhubarb and pineapple. Pour liquid in to a 2-cup measure. Fill to 1 cup, if it doesn't add more water. Put liquid into a 2-quart pot add the sugar and cornstarch. Use a whisk to mix together. Put on burner and cook slowly on medium till it thickens. Put chunks of pineapple and rhubarb in the thickened liquid and mix thoroughly. Pour this into the prepared pie pan line with dough. Top with rest of dough by crumbling it evenly over the top. Put a strip of aluminum around the edges to preventing the edges from darkening. Remove the last 15 minutes of baking. Bake for 1 hour at 425 degrees.

Steps:
- 1. In a bowl, stir together the first amount of sugar and flour. Add rhubarb and pineapple and stir.
- 2. Pour fruit mixture into pie shell. Moisten sides with water and cover with top crust. Make sure to cut slits in top crust. Sprinkle with remaining sugar.
- 3. Bake at 350 on bottom rack for about 50-60 mintues-until crust is brown
Tips:
- For the best results, use fresh rhubarb and pineapple. If using frozen fruit, thaw it completely before using. - Be sure to drain the pineapple well before adding it to the pie filling. This will help prevent the pie from becoming too runny. - If you don't have a pie crust mix, you can make your own using your favorite recipe or by following the instructions on a package of refrigerated pie dough. - To make a lattice-top pie crust, roll out the dough into a circle about 12 inches in diameter. Cut the dough into 1-inch wide strips. Place 6 strips vertically on the pie, spacing them evenly. Fold back every other strip, then place a horizontal strip across the center. Unfold the strips you folded back and fold back the alternate strips. Continue weaving the strips until you reach the end of the pie. Trim the edges and crimp to seal. - Bake the pie at 350 degrees Fahrenheit for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. - Let the pie cool for at least 15 minutes before serving. This will help the filling to set. Conclusion:
Rhubarb pineapple pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and tart filling and flaky crust, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a delicious and refreshing dessert, give rhubarb pineapple pie a try. You won't be disappointed!
