Yield Makes about 5 cups

Number Of Ingredients 5

1 pound trimmed rhubarb
5 cups water
1 cup sugar
1/4 cup packed fresh mint leaves
Garnish: fresh mint sprigs

Steps:

  • Cut rhubarb into 1/4-inch pieces and, in a saucepan, bring to a boil with water, sugar, and mint leaves. Simmer mixture, stirring occasionally, 15 minutes (rhubarb will disintegrate) and cool 15 minutes. Pour mixture through a fine sieve into a pitcher, pressing hard on solids. Chill mixture, covered, until cold, about 3 hours, and up to 2 days.
  • Serve coolers over ice in glasses, garnished with mint sprigs.

Tips:

  • Choose fresh, tender rhubarb stalks: Look for stalks that are bright red in color and have a firm texture. Avoid stalks that are wilted or have brown spots.
  • Prepare the rhubarb properly: Wash the rhubarb stalks thoroughly and trim off the ends. Cut the stalks into small pieces, about 1 inch in length.
  • Use a variety of mint leaves: Feel free to experiment with different types of mint leaves, such as peppermint, spearmint, or chocolate mint. Each type of mint will impart its own unique flavor to the tea.
  • Adjust the sweetness to your liking: The amount of sugar or honey you add to the tea is a matter of personal preference. Start with a small amount and adjust to taste.
  • Serve the tea hot or cold: Rhubarb mint tea can be enjoyed hot or cold. If you prefer cold tea, simply let it cool to room temperature before serving.

Conclusion:

Rhubarb mint tea is a delicious and refreshing beverage that can be enjoyed all year round. It is a good source of antioxidants and vitamins, and it can help to boost your immune system. With its combination of tart rhubarb and refreshing mint, this tea is a perfect way to relax and unwind. So next time you are looking for a healthy and flavorful drink, give rhubarb mint tea a try.
