  • Preheat oven to 375 degrees F (190 degrees C).

1 egg
1 cup sour cream
1 cup granulated sugar
3 tablespoons cornstarch
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3 cups rhubarb, coarsely chopped
1/2 cup rolled oats
1/3 cup brown sugar, packed
1/3 cup all-purpose flour
1/3 cup butter, softened
1 teaspoon orange rind, grated

Steps:

  • In a bowl, whisk the egg with the sour cream.
  • Combine the sugar, cornstarch, cinnamon and nutmeg; stir into the egg mixture.
  • Stir in the rhubarb; spoon into the pie crust.

2 cups rhubarb, diced (about 2 good-sized stalks)
2 cups strawberries, sliced
1 cup water
2 tablespoons cornstarch
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350.
  • In a roomy bowl, combine the flour, brown sugar substitute, oatmeal, butter, white sugar substitute, sugar and cinnamon and mix until crumbly.

  • 8. Add the water, cook and stir continuously over medium heat, until it comes to a boil.
  • 9. Boil until it looks clear and thickened, in about 5 minutes. (It may not even take five minutes for it to become clear and thicken.)
  • 10. Add the vanilla extract and the strawberry gelatin powder; cook and stir for 1 minute more, and then spoon the syrupy mixture over the rhubarb.
  • 11. Top with the remaining crumbled/crust/mixture.
  • 12. Bake in a 350 degree oven for 45 minutes, until the crumb mixture has browned slightly on top.
  • 13. Serve warm, or if desired, with Cool Whip or vanilla ice cream.
  • 14. I refrigerate leftovers (uncovered) in the fridge.

6 c rhubarb, diced
1 c sugar
3 Tbsp flour
1 c brown sugar
1 c old fashioned oats
1 1/2 c flour
1/2 c butter
1/2 c shortening

Steps:

  • 1. Preheat oven to 375 degrees. Combine first three ingredients and place in 9x9 baking dish to make filling. Combine remaining ingredients and sprinkle evenly over top of filling. Bake 40 minutes at 375 degrees. Serve warm with whipped cream or ice cream.

This recipee is from my childrens Grandmother. You may substitute any other fruit such as apples, blackberries, peaches, etc.

1 c flour, all purpose
3/4 c oatmeal, uncooked
1 c brown sugar
1/4 c butter, melted
1 tsp cinnamon
1 c sugar, white
2 Tbsp cornstarch
1 c water
1 tsp vanilla
2.5 - 3 c chopped rhubarb (i use small pieces)

Steps:

  • 1. Mix 1st 5 ingredients together. Press 1/2 of mixture into 8.5 X 11 pan. Sprinkle 2.5 - 3 Cups of chopped (3/4 in. pcs.) Rhurarb - or other fruits of your choice over 1/2 of the mixture. Mix sugar, cornstarch, water & vanilla together and heat til sugar is dissolved. Cool sauce til thickened. Pour over rhubarb. Sprinkle remaining 1/2 of crumb mixture over top of sauce.
  • 2. Bake at 350 degrees for 1 hour. Great served with vanilla or strawberry icecream. Enjoy!

CRUMBLE
1 c quick cooking oats
1/2 c flour
1 c brown sugar, firmly packed
1/2 c butter
RHUBARB MIX
3 c rhubarb, chopped into 3/4 - 1 inch pieces - i cut stalks into and then chop
1 heaping tablespoon flour
1 tsp ground cinnamon
1/2 c sugar
1/8 tsp salt
1 Tbsp water

Steps:

  • 1. Preheat oven to 350 degree F. Have an 11 x 7 baking dish sprayer with non stick cooking spray. Combine oats, brown sugar and flour, cut in the butter. ( I do this in my food processor. ) Press half of the crumbs, evenly into bottom of dish.
  • 2. In a bowl, combine rhubarb, flour, cinnamon, salt, sugar and water.
  • 3. Spread rhubarb mixture evenly over crumbs.
  • 4. Top with remaining crumbs. Place in oven and bake for 40 - 45 minutes or until rhubarb is tender.
  • 5. Serve as is or with whipped cream or ice cream. Enjoy...
