I modified this recipe with an extra 1/4 cup white sugar. I also added a modifier so that you can make extra streusel to smash around the bottom and sides to form a crust. The crumble on the top is extremely delicious!

Tips:

  • Choose the right rhubarb: Use fresh, firm rhubarb stalks that are deep red or pink in color. Avoid stalks that are wilted, bruised, or have brown spots.
  • Prepare the rhubarb properly: Trim the ends of the rhubarb stalks and remove any leaves. Cut the stalks into 1-inch pieces.
  • Use a variety of oats: For a more flavorful and textured crumble topping, use a combination of rolled oats, quick-cooking oats, and oat flour.
  • Add some spices: To enhance the flavor of the crumble topping, add a pinch of ground cinnamon, nutmeg, or ginger.
  • Don't overmix the crumble topping: Overmixing will make the topping tough. Mix just until the ingredients are combined and crumbly.
  • Bake the crumble until golden brown: Bake the crumble in a preheated oven until the topping is golden brown and the filling is bubbling.

Conclusion:

Rhubarb crumble is a classic dessert that is easy to make and always a crowd-pleaser. With its sweet and tart filling and crispy oat crumble topping, it is the perfect way to enjoy fresh rhubarb in season. Whether you are serving it for a special occasion or a casual get-together, this delicious dessert is sure to be a hit.
