BRAISED PORK WITH RED WINE

Braised Pork With Red Wine image

This easy recipe can be made in a saucepan, Dutch oven or slow cooker. The long simmer gives the pork shoulder, an inexpensive but versatile cut, a chance to absorb the robust flavors of red wine, carrot and garlic that it's cooked alongside. Serve it over egg noodles and topped with parsley for a hearty, satisfying dinner.

Provided by Mark Bittman

Categories     dinner, one pot, main course

Time 2h

Yield 4 servings

Number Of Ingredients 9

2 pounds boneless pork shoulder, cut into large chunks
Salt and pepper
2 cups fruity red wine, like Beaujolais or Burgundy (pinot noir)
1 cup good stock, or water
1 pound fat carrots, peeled and cut into large chunks
10 cloves garlic, more or less, peeled
2 tablespoons butter
Cooked egg noodles for serving
Chopped fresh parsley leaves for garnish

Steps:

  • Combine pork, salt and pepper to taste, wine, stock, carrots and garlic in a saucepan, Dutch oven or slow cooker. Bring to a boil, then adjust heat so that mixture simmers steadily but not vigorously. (If using a slow cooker, just turn it to ''high'' and let cook for at least three hours.)
  • Cook, stirring every half-hour or so, until meat is very tender and just about falling apart, at least an hour and most likely a bit longer. Use a slotted spoon to remove solid ingredients to a bowl, then turn heat to high. (If using a slow cooker, transfer liquid to a saucepan for this step.) Reduce to about a cup, or even less. Taste and adjust seasoning, then lower heat and stir in butter.
  • Add solids to sauce and reheat. Serve over egg noodles, garnished with parsley.

Medallions of Pork With Red-Wine Sauce image

Provided by Pierre Franey

Categories     dinner, main course

Time 50m

Yield 4 servings

Number Of Ingredients 12

8 slices boneless loin of pork, about 3 ounces each, trimmed of excess fat
Salt and freshly ground pepper to taste
1 tablespoon grated fresh ginger
2 sprigs fresh thyme or 1/2 teaspoon dried
1 bay leaf
1 whole clove
1/2 cup dry red wine
1 teaspoon balsamic vinegar
2 teaspoons honey
1 tablespoon olive oil
2 tablespoons finely chopped shallots
2 tablespoons butter

Steps:

  • Place the pork slices on a flat surface. Pound the meat lightly with a mallet or meat pounder. Sprinkle with salt and pepper.
  • Combine the ginger, thyme, bay leaf, clove, wine, vinegar and honey in a bowl and blend well. Place the sliced pork in a dish. Pour the mixture over the pork and marinate for 10 minutes.
  • Drain the pork medallions and pat dry. Reserve the marinade.
  • Heat the oil in a nonstick skillet large enough to hold the slices in one layer. When the oil is hot add the slices of meat and cook over medium-high heat about 5 minutes or until browned. Turn the slices and cook about 5 minutes more. Reduce the heat and continue cooking for about 2 minutes longer. Transfer the meat to a warm serving platter. Keep warm.
  • In the same skillet, add the shallots and cook, stirring, until wilted. Add the reserved marinade and cook, stirring and scraping the bottom. Add any juices that have accumulated from the platter. Scrape the bottom with a wooden spatula and cook until the marinade is reduced to 3/4 of its original quantity. Swirl in the butter and pour the sauce over the medallions. Remove the bay leaf and thyme sprigs before serving.

RED WINE-BRAISED PORK CHOPS

Red Wine-Braised Pork Chops image

My husband loves dishes with sauce and cheese, so I created this recipe for him. It's not exactly diet food, but it is great for company or just a special dinner. It goes well with roasted small red potatoes and asparagus.

PORK CHOPS IN HONEY MUSTARD & RED WINE MARINADE

PORK CHOPS IN HONEY MUSTARD & RED WINE MARINADE image

Categories     Pork     Sauté     Quick & Easy

Yield 6 servings

Number Of Ingredients 13

Marinade:
1 large plastic freezer bag (or ziplock)
3 cup red wine (whatever you have around)
1 cup mustard w seeds
2 tbsp dijon mustard
1 cup honey
1 tsp thyme
1 tsp rosemary
3 garlic cloves (crushed)
Salt
Pepper
4-6 Pork chops
2 tbsp olive oil

Steps:

  • Put all the marinade ingredients in a bowl and whisk them. Pour it into the bag. One by one, punch holes into your pork chops with a fork. This will get tenderize the meat AND let the marinade penetrate INTO the pork chop. Put the pork chops into the bag and let sit for 10 minutes (or as long as 2 days in your fridge). Heat a 14 inch nonstick pan at high heat. When hot, add the olive oil and spread it around the pan. Add your pork chops. Cook your pork chops on high heat for 3 minutes per side. Pour 2/3 of the marinade over them. Sauté for 10 minutes on medium-high heat. Don't let the pan get dry. Add the remaining marinade as needed. You can't go wrong on cooking time. If you need to let it simmer for longer, you can ... just add water so that the sauce doesn't dry out. The end result should be a delicious thick brown sauce coating your chops.

PORK LOIN BRAISED IN WINE AND RED PEPPERS

Pork Loin Braised in Wine and Red Peppers image

I have made this pork loin so many times it is absolutely the best! I prefer a bone-in loin but you can use either bone-in or without the bone! You can also do this with thick-cut pork chops too! If you want a thicker sauce you can thicken it up after cooking with some flour and cold water. Plan ahead the pork needs to marinate overnight. Serve this with crusty buns to soak up the sauce. Cooking time is only estimated depending on the size of the porl loin. If desired you can omit stuffing the roast with garlic cloves. If you are serving this to more than 6 people then prepare two pork loins. This complete dish can be prepared a day in advance, just place half of sauce in an oven proof dish, top with pork slices, the cover with remaining sauce, cover and refrigerate, the following day, cover dish and rewarm in a 325 degree oven until heated through, serve with more sauce. This is delicious!

1 -2 tablespoon chopped fresh garlic
2 large red bell peppers, coarsley chopped (or sliced)
1 lb fresh small bottom mushroom

  • Remove from the fridge and let the loin rest on top of the counter to come down to almost room temperature before browning.

  • Add in wine, crushed tomatoes, beef broth, bay leaves, button mushrooms and marjoram; mix to combine with a wooden spoon.

  • Transfer the loin to a serving plate and let rest for 15 minutes.
  • Season the sauce with salt and pepper to taste.
  • *NOTE* although this next step is only optional, I prefer to reduce the sauce slightly, but you do not have to do this, just serve the sauce as is without reducing.
  • Place the Dutch oven on top of the stove and boil the sauce (uncovered) to reduce slightly while the pork is resting (about 15 minutes).

ROASTED LOIN OF PORK WITH BRAISED RED CABBAGE AND PORT WINE SAUCE

ROASTED LOIN OF PORK WITH BRAISED RED CABBAGE AND PORT WINE SAUCE image

Categories     Pork     Roast

Yield 6-8 servings

Number Of Ingredients 27

for Port Wine Sauce:
1 tablespoon (1/2 ounce) unsalted butter
2 large shallots, trimmed, peeled, and chopped (2 tablespoons)
1/4 cup balsamic vinegar
1 cup ruby port
1 cup Brown Veal Stock
For pork loin:
Kosher salt
3 tablespoons granulated sugar
2 tablespoons cracked black peppercorns
1 tablespoons dried thyme
4 whole cloves
4 whole allspice, cracked
1 bay leaf
1 center-cut pork loin, rib bones left in (2 1/2 to 3 pounds)
1 head (1 pound) red cabbage, cored, split and cut into 1/4-inch slices
Freshly cracked black pepper
1 large onion (12 ounces), peeled and cut into1/2-inch-thick round slices
1 tablespoon vegetable oil
1 large garlic clove, peeled and chopped(1 teaspoon)
1/4 cup balsamic vinegar
8 fresh sage leaves, chopped fine
1 tablespoon drained capers
Prepare the Port Wine Sauce. In a small saucepan, over medium-high heat, melt the butter. Sauté the shallots until wilted, about 5 minutes. Pour in 1/4 cup balsamic vinegar and cook until completely absorbed, about 2 to 3 minutes. Add the port and cook until 1/2 cup remains, about 5 to 10 minutes. Add the stock and cook until the sauce begins to thicken, about 5 to 10 minutes. Strain the sauce through a fine-mesh strainer into a double boiler and keep warm.
Brine the pork:
Crack the allspice. In a kettle bring water to a boil and add allspice, salt, sugar, 2 tablespoons pepper, thyme, cloves, and bay leaf and simmer 15 minutes. Cool brine in bowl large enough to hold brine and pork. Chill brine for 2 hours.
Add pork, making sure it is completely covered with brine. Marinate, covered and chilled, at least 2 days or up to three.

Steps:

  • In a large stockpot, bring approximately 4 quarts of water to a boil and add 1 tablespoon of kosher salt. Fill a large mixing bowl with ice water. Blanch the red cabbage for about 30 seconds in a strainer in the large stockpot. After blanching, plunge the strainer containing the cabbage in the ice water for about 30 seconds. Dry the cabbage with a towel and reserve. Preheat the oven to 400 degrees. Season the pork lightly with black pepper. In a large cast-iron skillet, over medium-high heat, brown the pork loin on all sides, about 10 to 15 minutes. When properly browned, remove the pork loin to a platter and reserve. Distribute the onion slices on the bottom of the cast-iron skillet and place the browned pork loin on top. Transfer to the oven and roast until the internal temperature of the pork is 150 degrees, about 20 to 25 minutes. Remove the cast-iron skillet from the oven, transfer the pork loin from the skillet to a platter and let it rest in a warm spot. Scrape the bottom of the skillet to loosen any browned particles. Remove any burned onions. Sauté remaining onions over medium heat until caramelized, about 10 minutes, remove from the pan and reserve. In a large sauté pan, over high heat, preheat the vegetable oil. Add the garlic and blanched cabbage. Sauté until the cabbage is thoroughly heated through, but still crisp, about 4 to 5 minutes. Add the 1/4 cup balsamic vinegar and the caramelized onions from the cast-iron skillet, stir briefly, add the sage and capers, and season with kosher salt and black pepper to taste. Remove from the heat and keep warm. To serve, cut the pork loin into 1/2-inch-to-2-inch-thick slices with one bone in each slice. Place the cooked cabbage on a large warm platter. Arrange the slices of pork on the cabbage, ladle the sauce over, and serve immediately.

GOATS CHEESE STUFFED PORK TENDERLOIN WITH RED WINE BALSAMIC CHER

Goats Cheese Stuffed Pork Tenderloin With Red Wine Balsamic Cher image

This is a great pork recipe full of flavour and really delicious, it is a little fiddly to put together but well worth the end result. The only problem that occurs sometimes, not all the time, is some of the goats cheese melts out, this is no problem once I slice the pork I just put the escaped cheese into whatever slice it is missing from. The tighter you can get the kitchen string and the closer together the less this will happen.

Provided by The Flying Chef

Categories     Pork

Time 1h25m

Yield 3 serving(s)

Number Of Ingredients 13

1 (550 g) pork tenderloin
salt and pepper
300 g goat cheese
1 teaspoon lemon zest
1 1/2 tablespoons fresh basil, finely chopped
1 teaspoon instant chicken bouillon granules
1 tablespoon cherry preserves
1 teaspoon cornflour
1/2 cup water
1/2 cup dry red wine
1/2 cup cherries, pitted and halved (Fresh are best when I made this the other night I could not get any fresh as they are out of season,)
1 1/2 tablespoons balsamic vinegar
pepper

Steps:

  • Using a sharp knife, butterfly pork down the centre lengthwise being careful not to cut all the way through. Open pork out, using a meat mallet, pound to flatten to an even surface, do not over pound pork, season both sides of pork with salt and pepper.
  • In a bowl combine cheese, basil and zest, until well mixed.
  • Spoon mixture evenly over one half, remembering to leave enough of an edge, so when you fold over the other half so it covers cheese completely.
  • Fold other half of pork over and secure with kitchen string at close intervals, place pork in a lightly oiled roasting pan and roast in pre-heated oven 180-190c for 45-55 Min's or until pork is cooked through.
  • For The Sauce.
  • Heat wine, water, balsamic and chicken stock, stir until almost boiling add cherry preserves, mix a little water with cornflour and add to sauce and stir until sauce thickens, add cherries and pepper to taste, stir until heated through and serve with pork.
  • To Serve: Slice pork into thick slices and arrange on plate top with sauce. I served mine with twice baked parsnip mash and asparagus spears wrapped in bacon.
  • Bon Appetit.
  • 2-3 Servings depending on appetites.
  • I serve this for 3.

JäGERSCHNITZEL (PORK SCHNITZEL WITH RED WINE-MUSHROOM SAUCE)

Jägerschnitzel (Pork Schnitzel With Red Wine-Mushroom Sauce) image

Categories     Pork     Dinner

Number Of Ingredients 18

2 boneless pork chops
1 tablespoon vegetable oil
3/8 cup flour
1/2 tablespoon salt
1/2 teaspoon black pepper
1 egg
1 tablespoon water
1/2 cup breadcrumbs
1/2 tablespoon parsley, dried
1/2 teaspoon paprika
1/2 teaspoon garlic powder
2 ounces bacon, diced
1/4 onion, diced
1 cup mushrooms, sliced
2 tablespoons red wine
1/2 cup chicken stock
1 tablespoon cornstarch
1 dash salt

Steps:

  • Preheat oven to 200° F so you can keep schnitzel warm while preparing the mushroom sauce.
  • Set up your breading stations. Lay out two plates and one shallow bowl, with the bowl in the middle. Mix flour with salt and pepper on the first plate. Whisk egg with water in the bowl. Mix breadcrumbs with dried parsley, paprika, and garlic powder on the second plate.
  • Place one of the pork chops in a Ziploc bag but don't seal the bag. Using a meat pounder or the bottom of a heavy pan, pound pork until it's 1/8" thick, which is thinner than you think! If using a pan, try to land the bottom of the pan square on the chop each time to help create a more uniform thickness and even surface. Repeat with remaining chops.
  • One at a time, dredge pork chop in flour. Coat both sides and shake off excess. Then dip into the egg wash. Flip chop in egg mixture to coat both sides. Pull chop out and let excess drip off for a moment before laying chop onto the breadcrumb mixture. Push chop down completely into the breadcrumb mixture and then flip to push down on the other side, to ensure both sides are fully covered in breadcrumbs. Use your hands if necessary. If using tongs to move chops from one station to another, these will work as well.
  • Let chops rest for at least 5 minutes on a wire rack to let the crumbs dry out a little bit. This helps the crust be crispier.
  • Pour oil into fry pan so it's about 1/2-inch deep and warm over medium high heat. When oil shimmers, add one or two chops depending on the size of your pan. Let cook 1-2 minutes on each side. The chops are thin so they will cook quickly. You're looking for a nice golden brown color on them. When schnitzel is finished, move to the oven to keep warm and repeat with remaining pork chops.
  • Cook bacon in skillet over medium heat until golden, but not black and too crispy, about 3 minutes.
  • Add onions to the pan and cook 3 minutes in the bacon fat until onions become a bit translucent. Add mushrooms and continue cooking for another 4 minutes until mushrooms are properly sautéed.
  • Add red wine and allow mixture to reduce by 2/3, just a minute or two. Add broth and simmer until mixture is reduced by a 1/3. While sauce is cooking down, make slurry to thicken the sauce. Whisk together cornstarch and 2 tablespoons stock off the heat until well combined and no lumps remain. Once stock has reduced, add slurry and stir constantly for a minute or two until sauce thickens and any taste from the cornstarch has cooked off. Cook too long and the slurry will lose some of its ability to thicken the sauce.
  • Remove sauce from heat and season with salt. Add a squeeze of lemon to brighten the sauce.
  • Remove schnitzel from the oven and serve with mushroom sauce

POT-ROASTED PORK WITH RED WINE, SAGE AND ROSEMARY

Pot-Roasted Pork With Red Wine, Sage and Rosemary image

This recipe is from Australian Delicious and I had the pleasure of participating in a cooking a class in which this was part of a 4 course meal. We all participated in the class so times are estimated as there were 12 of us in the class. Served with polenta.

Provided by ImPat

Categories     Pork

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 14

15 g porcini mushrooms (dried, from gourmet shops and delis)
100 g butter, divided (unsalted)
1 kg pork loin (rolled, boneless and skinless and as much fat left on as possible)
3 garlic cloves
1 cup sage leaf
1/4 cup rosemary
400 g tomatoes (whole canned)
750 ml shiraz wine, divided
salt and pepper
1 tablespoon parsley (flat leaf chopped)
3 cups water (750ml)
1 cup polenta
80 g butter (unsalted)
2 cups parmesan cheese (160 grams, grated)

Steps:

  • Soak the dried porcini in 1 cup (250ml) boiling water for 10 minutes to soften (reserve liquid when draining).
  • Meanwhile melt half the butter in a flameproof casserole over medium-low heat.
  • Season pork well with salt and pepper; then place fat side down in the pan; gently sear for 6 to 8 minutes until well coloured and the fat has rendered.
  • Turn and sear other side for 4 to 5 minutes. (Our pork loin which was close to 2 kilo took a total of about 20 minutes to get a nice golden colour.).
  • Remove pork from the pan, drain off any excess fat, and melt the remaining butter (we added some more olive oil); add the garlic, sage and rosemary and cook, stirring, for 3 minutes or until golden.
  • Squeeze porcini to remove excess liquid and set soaking liquid aside.
  • Return pork to the pan (at this point we put into a large baking dish); add mushrooms, tomatoes and 1 cup (250ml) wine and season well with salt and pepper.
  • Cover the surface with a baking paper, tucking in the edges as this ensures that the dish will not dry out.
  • Reduce heat to low and simmer for 30 minutes (we put into the oven at about 160 degrees Celsius. Please note our pork was larger than called for in the recipe).
  • Turn the pork, baste with the sauce, add the remaining wine and reserved mushroom stock.
  • Recover with baking paper and cook for a further 40 to 50 minutes until the sauce is rich and the pork is tender (ours was in the oven longer).
  • If the sauce starts to dry out, add splashes of water or wine to maintain the moisture level.
  • The sauce will intensify in colour but shouldn't burn.
  • POLENTA:.
  • For the polenta, place 3 cups (750ml) water ina saucepan; bring to a boil; gradually add the polenta, whisking constantly; reduce the heat to low and cook, whisking for 8 to 10 minutes.
  • Remove from the heat, fold in butter and Parmesan cheese, season and keep warm.
  • Remove the pork from the sauce, thickly slice.
  • Serve with the polenta, drizzle with sauce, and garnish with parsley.

1 pound ground pork
2 garlic cloves, minced
1 tablespoon finely chopped shallot
1 1/2 teaspoons kosher salt
1 teaspoon finely ground pepper
1 teaspoon minced fresh rosemary
Finely grated zest of 1 lemon
Olive oil for cooking

Steps:

  • In a large bowl, mash together the prunes and red wine. Add remaining ingredients and mix until well combined. Form sausage mixture into desired shape; small patties are nice for these. Chill for up to 5 days, freeze for up to 3 months or use immediately.
  • Brush sausages with oil and grill or broil them until browned and cooked through. Or fry them in a little oil until well browned all over.

12-16 whole chestnuts, peeled and cooked (or tinned)
2 Tablespoons strong meat stock
3 firm slightly underripe pears
1/2 lemon
pinch of sugar
6 - 8 large pitted prunes
Red wine
1/2 orang, sliced
Vegetable Garnishes
1 large knob celery root, cut into sticks, about .5 X 2.5 inches
1 pound Brussels sprouts
3 to 4 carrots, cut into 3-inch pieces and in half lengthwise, if large
2 large baking potatoes (8 ounces each), cut into small wedges and soaked in cold water until ready to cook
2 turnips (about 5 ounces each) cut into sticks
Sauce
2 Tablespoons butter
1 large shallot, chopped
1/4 cup cognac or brandy
1 cup dry red wine
Abt 1 cup strong meat stock
1 Tablespoon red or black currant jelly
1 Tablespoon chopped parsley

Steps:

  • Sprinkle inside of boned pork with freshly ground pepper and salt. Reserve a few sprigs of rosemary for the pan; chop leaves from rest and strew in a line across meat. Roll the roast together and tie it securely with string. Rub a roasting pan with about 2 T softened butter; sprinkle pan with salt and pepper. Make a bed of garlic in center of pan and arrange meat, seam side down, on top. Set aside. Except for Brussels sprouts, prepare all fruit and vegetable garnishes. (Get ready to add to roasting pan.) Sauté chestnuts in 2 T butter and moisten with 2 T stock. Cook until glazed. Peel pears, wipe with ½ lemon and cut into ⅓ inch thick slices. Sauté in 2 T butter with a pinch of sugar and ½ C water. Cook until water evaporates and pears are glazed. Marinate prunes in enough red wine to cover along with orange slices (≥2 hours). Drain and gently heat in 1.5 T butter. Sauté onions in 2 T butter with ⅓ t sugar until nicely glazed. Blanch celery root for 5 min, drain and rinse in cold water. Trim Brussels sprouts and put to soak in cold salted water. Preheat oven to 350. Roast pork for 15 min. Turn, baste and roast 15 min more. Lower to 325; turn and baste again. Roast 30 min, turning and basting every 15 min. When pork has cooked 1 hr., add carrots, reserved rosemary sprigs and more butter. Baste and roast 15 min, then raise to 350 and add the potatoes. Turn in pan juices until coated. Place meat fat side up; baste and continue to cook. When potatoes have cooked 15 min, add turnips and onions. Baste again and roast 15 min. When pork has only 15 min left, add celery root and turn all vegetables in pan juices. When pork is done, place on a carving board and cover with heavy-duty aluminum foil. Transfer all vegetables but garlic to a smaller roasting pan. Return to oven. Raise to 400 while making sauce. See introduction for remainder of recipe.

Medallions Of Pork with Red-Wine Sauce image

Provided by Kitchen Crew

Categories     Pork

Number Of Ingredients 13

8 slice pork loin, boneless and trimmed of fat, 3 ounces each
1 clove
1/2 c red wine
1 tsp balsamic vinegar
2 tsp honey
1 Tbsp olive oil
2 Tbsp shallots, finely chopped
2 Tbsp butter
1 Tbsp ginger, grated
1/2 tsp thyme, dried
1 bay leaf
pinch salt
pinch pepper

Steps:

  • 1. Place pork slices on a flat surface; pound lightly with a mallet, then sprinkle with salt and pepper.
  • 2. Combine ginger, thyme, vinegar, bay leaf, clove, wine and honey in a bowl and blend well.
  • 3. Place sliced pork in a dish and pour mixture over it; marinate for 10 minutes.
  • 4. Drain the pork medallions and pat dry; reserve marinate.
  • 5. Place meat in a single layer in skillet in the hot oil; cook for 5 minutes, turn and cook for 5 minutes more over medium high heat.
  • 6. Reduce heat and cook meat for 2 minutes more; transfer meat to a dish and keep warm.
  • 7. In skillet add the shallots and cook stirring until wilted; add the reserved marinate and cook, stirring and scraping the bottom.
  • 8. Cook until marinate is reduced to 3/4 its original amount.
  • 9. Swirl in the butter and pour the sauce over the medallions.
  • 10. Remove bay leaf and sprigs of thyme before serving.

Tips:

  • Choose the right cut of pork: Pork shoulder or pork butt is the best cut for this recipe as it is flavorful and tender when cooked slowly.
  • Marinate the pork: Marinating the pork in the red wine mixture for at least 4 hours, or overnight, helps to tenderize the meat and infuse it with flavor.
  • Sear the pork: Searing the pork in a hot skillet before braising helps to develop a nice crust and lock in the flavor.
  • Use a good quality red wine: The red wine used in this recipe should be a dry, full-bodied wine that you would enjoy drinking. Some good options include Cabernet Sauvignon, Merlot, or Pinot Noir.
  • Cook the pork slowly: Braising the pork in the red wine mixture for 2-3 hours, or until it is fall-apart tender, allows the flavors to develop and the meat to become very tender.
  • Serve with your favorite sides: This red wine pork can be served with a variety of sides, such as mashed potatoes, roasted vegetables, or rice.

Conclusion:

This red wine pork is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The pork is tender and flavorful, and the red wine sauce is rich and savory. Serve this dish with your favorite sides for a complete and satisfying meal.
