Steps:
- Mix the fish sauce, water, chile garlic sauce, the lime juice, and sugar together in a small pan and bring to a boil.

SAUTEED RED SNAPPER
The mild, slightly sweet flavor and flaky texture of red snapper takes well to light seasoning and a quick saute. You can also make this dish with black sea bass. The skin of both fish is edible and crisps nicely in a skillet.

Tips:
- Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and ensure that your dish comes together quickly and easily.
- Choose the Right Red Snapper: Look for red snapper that is fresh and has a firm, springy texture. Avoid fish that is dull or has a slimy appearance.
- Don't Overcook the Fish: Red snapper is a delicate fish that can easily be overcooked. Cook it just until it is opaque throughout, typically around 3-4 minutes per side.
- Make Sure the Vegetables Are Crisp-Tender: Sauté the vegetables until they are crisp-tender, but still retain some of their bite. This will give them a nice texture and flavor.
- Use a Good Quality Soy Sauce: The soy sauce is a key ingredient in the glaze, so make sure you use a good quality one. Look for a soy sauce that is naturally brewed and has a rich, umami flavor.
- Add Some Spice: If you like your food spicy, add some chili peppers or Sriracha sauce to the glaze. This will give it a nice kick.
