Yield Serves 2

Number Of Ingredients 6

1/4 cup medium-dry Sherry
1 large shallot, minced (about 1/4 cup)
2 tablespoons dry white wine or water

Tips:

  • Choose the freshest red snapper possible. Fresh fish will have bright, clear eyes, red gills, and a firm, springy texture.
  • If you can't find red snapper, you can substitute another firm-fleshed white fish, such as cod, halibut, or tilapia.
  • Don't overcook the fish. Red snapper is a delicate fish, so it only needs to be cooked for a few minutes per side.
  • Use a good quality white wine for the sauce. A dry white wine, such as Chardonnay or Sauvignon Blanc, will work well.
