1/2 cup sugar
1 tablespoon lemon juice
1-1/2 teaspoons unflavored gelatin
1/4 cup cold water
1 cup heavy whipping cream

Steps:

  • Place the raspberries in a food processor; cover and puree. Strain and discard seeds. Transfer puree to a large bowl. 1-3/4 cups boiling water
2 packages (10 ounces each) frozen sweetened raspberries, thawed
2 cups heavy whipping cream, whipped
23 ladyfingers
Fresh mint, and raspberries and additional whipped cream, optional

  • In a large bowl, dissolve gelatin in boiling water. Stir in raspberries. Refrigerate until partially thickened.
