2 tablespoons lemon juice
2 garlic cloves, halved

Nutrition Facts : Calories 95 calories, Fat 7g fat (1g saturated fat), Cholesterol 0 cholesterol, Sodium 276mg sodium, Carbohydrate 8g carbohydrate (3g sugars, Fiber 3g fiber), Protein 2g protein. Diabetic Exchanges

Tips:

  • Prep your ingredients ahead of time: Chop the red peppers, onion, and garlic; drain and rinse the beans; measure out the spices. This will make the cooking process much smoother.
  • Use a variety of beans: This recipe is a great way to use up leftover beans, so feel free to mix and match different types. Some good options include black beans, kidney beans, and pinto beans.
  • Don't overcrowd the pan: When cooking the vegetables, be sure to give them enough space so that they can brown properly. If you overcrowd the pan, they will steam instead of brown.
  • Season to taste: This recipe is a starting point, so be sure to adjust the seasonings to your own taste. Add more chili powder or cumin if you like it spicy, or add a pinch of sugar if you prefer a sweeter flavor.
  • Serve with your favorite sides: This dish is great served with rice, quinoa, or tortillas. It also makes a great filling for tacos or burritos.

Conclusion:

This red pepper bean medley is a healthy, flavorful, and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover beans and vegetables.
