- Line a 9 inch fluted, loose-bottom flat tart pan with pastry. Chill for 15 minutes. Cover with foil, and fill with pie weights. Bake for 10 minutes. Remove foil and weights, and bake for a further 5 minutes.

- Preheat oven to 400°F. Oil heavy large baking sheet. Toss onion wedges with oil in medium bowl. Season with salt and pepper. Arrange onions in single layer on baking sheet. - Lightly brush a 19cm slab pan with a little of the olive oil.
- Preheat your oven to 180°C.
- Melt the butter in a frying pan over a medium to high heat.
- Add the onions and cook stirring for 10 minutes or until soft.
- Add the vinegar and sugar and stir to combine.
- Cook stirring occasionally for 8-10 minutes or until the liquid evaporates, and onions caramelise.
