Steps:
- Bring a pot of water to a boil. Score the top of each tomato with a ¿T.¿ Drop the tomatoes in the water for 2 minutes, then remove with tongs and let cool. Once cool, peel off the skins and squish out most of the seeds of the tomatoes; you can use plastic gloves to handle the tomatoes during this process. (If you like you can freeze the tomatoes at this point and continue making the sauce at another time.)
- Heat the oil in a Dutch oven over medium heat until shimmering. Add the onion and cook, stirring occasionally, until softened and golden around the edges, 6 to 8 minutes. Add the garlic, Italian seasoning and oregano and cook, stirring constantly, until the garlic is fragrant, about 30 seconds. Add the wine and deglaze the pan by scraping up any browned bits from the bottom.
- Add the tomatoes and bay leaf and increase the heat to medium-high. Cook, stirring every couple of minutes, until the sauce is thickened and deep red, 50 to 60 minutes. Season to taste with salt and pepper. Add a bit of sugar if it is too acidic. Discard the bay leaf. Add the basil when ready serve.
HOMEMADE RED HOT SAUCE
Steps:
- Combine the peppers, garlic, onions, salt and oil in a non-reactive saucepan over high heat. Saute for 3 minutes. Add the water and continue to cook, stirring occasionally, for about 20 minutes, or until peppers are very soft and almost all of the liquid has evaporated. (Note: this should be done in a very well-ventilated area!) Remove from the heat and allow to steep until mixture comes to room temperature. In a food processor, puree the mixture for 15 seconds, or until smooth. With the food processor running, add the vinegar through the feed tube in a steady stream.
- Taste and season with more salt, if necessary. (This will depend on the heat level of the peppers you use as well as the brand of vinegar used.) Strain the mixture through a fine mesh sieve and then transfer to a sterilized pint jar or bottle and secure with an airtight lid. Refrigerate. Let age at least 2 weeks before using. Can be stored in the refrigerator for up to 6 months.

Tips:
- Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the flavor of your sauce. Look for tomatoes that are deep red, plump, and free of blemishes.
- Use fresh garlic and herbs: Fresh garlic and herbs will add a lot of flavor to your sauce. If you don't have fresh garlic, you can use jarred garlic, but be sure to use less, as it is more concentrated.
- Don't overcrowd the pan: When you're cooking the tomatoes, don't overcrowd the pan. This will prevent them from cooking evenly and will result in a watery sauce.
- Simmer for at least 30 minutes: Simmering the sauce for at least 30 minutes will help to develop its flavor. The longer you simmer it, the better it will taste.
- Season to taste: Be sure to season the sauce to taste with salt, pepper, and other spices. You can also add a pinch of sugar to balance out the acidity of the tomatoes.
Conclusion:
This red hot tomato sauce is a delicious and versatile sauce that can be used on a variety of dishes. It's perfect for pasta, pizza, chicken, fish, and vegetables. It's also a great way to use up leftover tomatoes. With just a few simple ingredients and a little bit of time, you can make a delicious and flavorful sauce that your family and friends will love.
