2 red apples , grated
50g dried sour cherries or cranberries
200ml blackcurrant cordial or squash (not low-sugar)
200ml red wine vinegar

12 Cumberland sausages and mash (or jacket potatoes) to serve

2 tablespoons unsalted butter
7 cups red cabbage, finely shredded
1 cup red onion, thinly sliced
1/2 teaspoon salt
1 1/2 cups sour cherry juice (or pomegranate or cranberry juice)
2 tablespoons honey (lavender or wildflower)
1 tablespoon tomato paste
1/3 cup dried sour cherries
1 stick cinnamon (4-inch)
2 whole cloves
1/4 teaspoon ground cardamom (optional)
fresh ground pepper

Steps:

  • In a small dutch oven or deep medium skillet, melt the butter over medium heat. Add the cabbage, onion, and salt and saute until wilted, 5 minutes. Cover tightly, reduce the heat to medium-low and cook until the cabbage is very moist, 8 minutes.
