Yellow Squash Recipe image

This recipe was given to me by my daughter.It's one of the best squash recipes that I've ever tasted.

Number Of Ingredients 10

2 lb yellow crooked neck squash
1 c water
2 small onions, chopped
2 tsp butter or margarine, melted
1 1/2 c shredded cheddar cheese
1 1/4 c round buttery cracker crumbs, divided
1/4 tsp salt
1/4 tsp pepper
4 slice bacon, cooked and crumbled
2 large eggs, lightly beaten

Steps:

  • 1. Combine squash and water in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 15 minutes or until tender.Drain well, and mash. Drain again and set aside.
  • 2. Saute onion in butter in large skillet over medium heat until tender. Combine squash, onion, cheese, 3/4 cup cracker crumbs, salt and remaining three ingredients; stir well.
  • 3. Spoon mixture into a lightly greased 2 quart casserole; sprinkle with remaining 1/2 cup cracker crumbs. Bake, uncovered, at 350* for 40-45 minutes or until throughly heated.
