Spicy, flavorful and very satisfying, these fluffy Rancheroos are great any time of the day. I top mine off with a little salsa and sour cream.... mmmm, good!

Time 1h

Number Of Ingredients 7

3 small flour tortillas
6 large eggs
1/2 c milk
1 1/2 c cheddar cheese, shredded (I use Cabot 50% reduced fat jalapeno)
1/2 can(s) green chiles, chopped (4.5 oz)
1/8 tsp ground cumin
1/8 tsp ground red pepper

Steps:

  • 1. Preheat over to 350ยบ. Arrange tortillas in a 10" deep dish pie plate.
  • 2. In a large bowl beat eggs and milk together, adding chiles and spices.
  • 3. Sprinkle 1/3 of the cheese on the tortillas. Pour half the egg mixture over the cheese. Add 1/3 more cheese, then the remainder of the egg mixture. Top with the rest of the cheese.
  • 4. Cook for 30 - 45 minutes, until the tortilla crust is browned and the egg mixture is golden and set. Let stand for 10 minutes before serving - it will deflate a bit - and serve with salsa, sour cream or guacamole.

These were a bit too greasy for my taste. I think I will drain the ground beef more thoroughly next time.

I've tried several different recipes for Wavy Rancheros and this one is by far the best. The combination of flavors is perfect.

These were a bit bland for my taste. I think I will add some more seasonings next time.

These were a bit too spicy for me, but my husband loved them. I think next time I will use less chili powder.

These were so easy to make and so delicious! I used ground turkey instead of beef and they were still great. I also added some chopped peppers and onions to the mix. My husband and I both loved them.

AMAZING! My family loved, loved, loved these Wavy Rancheros. I made them for breakfast on a Saturday morning and they were a huge hit. The combination of the sweet potatoes, black beans, and eggs was perfect. I also loved the crispy cheese on top. I
