W-S SOUR CREAM BLUEBERRY WAFFLES image

Yield 8 Waffles

3 eggs, separated
3/4 cup milk
3/4 cup sour cream
8 tbsp (1 stick) unsalted butter, melted
1 1/2 cup flour
2 tsp baking powder
1/2 tsp baking soda
1 tbsp sugar
1 cup blueberries

Steps:

  • Wisk egg yolks, then wisk in the milk, butter, and sour cream; Sift together the flour, baking powder, baking soda, sugar; Add dry ingredients to wet and fold together just until smooth. Stir in 1/2 cup of the blueberries. In another bowl, wisk the egg whites until stiff peaks form. Fold egg whites into batter.
