VIDALIA ONION, CHICKEN,& MUSHROOM CASSEROLE image

Picture is of VIdalia's, but you can also use sweet Walla Walla's, or Maui's. This is a delicious sweet onion recipe,very quick and simple to make. Full of that great onion flavor. Served with a green salad and corn bread....YUM! Be still my heart! Please share a picture, when you bake it. Thank you. 5/3/12

2 large sweet onions...your choice
1 large chicken breast - split
1 can(s) 10.75 oz cream of mushroom soup
2 medium red potatoes - thickly sliced
2 Tbsp oil
paprika

Steps:

  • 1. brown chicken breasts in 2 Tablespoons of oil. Set aside on a paper towel . In a 1-1/2 quart greased casserole dish, layer the sliced potatoes on the bottom, follow with the sliced onions, chicken and then top off with the mushroom soup. Sprinkle with paprika. Bake in a 350 degree oven for 1 hour.
  • 2. You can scrub the potatoes and leave the skins on ...if you prefer. They can also be cut into medium chunks...you're choice.
