TOMATO, HERB AND CHEESE TART image

Number Of Ingredients 4

1 purchased or homemade pie crust
1 pound plum tomatoes sliced into 1/2 thick slices
3/4lb gruyere cheese grated
1 tsp. each dried basil, oregano and thyme, salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees. Roll out pie crust and place in a 10" tart pan w/removable bottom. Precook crust until just beginning to turn golden brown approx. 12 min. Remove crust from oven and let cool. Lower oven temp to 350. Place tomato slices on paper towels for 30 minutes to drain. Sprinkle grated cheese evenly over tart crust, slightly overlap tomato slices on top of cheese in a circular pattern, sprinkle evenly with herbs, salt and pepper. Bake in the oven for approx. 45 min or until all cheese is melted and tomatoes are cooked. Remove from oven and let cool on rack until set about 5 min.
