Tomato Basil Crostini image

Have this Italian appetizer ready in just 25 minutes - tomato, garlic, cheese and basil served over toasted French bread.

32 slices French bread, 1/4 inch thick
1/4 cup olive or vegetable oil
3 roma (plum) tomatoes, diced (2 cups)
3 cloves garlic, finely chopped
1/2 cup shredded Parmesan cheese
2 tablespoons chopped fresh basil leaves
1/2 teaspoon salt

Steps:

  • Heat oven to 425°F. Place bread on ungreased cookie sheet. Brush 2 tablespoons of the oil on bread. Bake 4 to 5 minutes or until light golden brown.
  • Mix tomatoes, remaining 2 tablespoons oil, the garlic, cheese, basil and salt. Place about 1 tablespoon tomato mixture on each warm bread slice.
