I made a vegan version of these potatoes by using olive oil instead of butter. They turned out just as good as the original recipe. I highly recommend this recipe to vegans and non-vegans alike.

I've been making oven-baked potatoes for years, but Teresa's recipe is the best I've ever tried. The secret is in the herbed olive oil. It gives the potatoes an incredible flavor.
