Sweet Spinach and Orange Salad image

I prepare this first when making a meal to let the flavors blend in the salad. The dressing is my own concoction and is delicious over fresh fruit, too.-Carole Martin, Tallahassee, Florida

Number Of Ingredients 15

1 package (10 ounces) fresh spinach, torn
1 can (11 ounces) mandarin oranges, drained
10 cherry tomatoes, halved
1 cup sliced fresh mushrooms
DRESSING:
1/3 cup sugar
3 tablespoons cider vinegar
1 tablespoon honey
1/2 teaspoon dried minced onion
1/2 teaspoon celery seed
1/2 teaspoon ground mustard
1/2 teaspoon paprika
1/2 teaspoon lemon juice
1/2 cup vegetable oil
1 can (2.8 ounces) french-fried onions

Steps:

  • In a large salad bowl, toss the spinach, oranges, tomatoes and mushrooms; set aside. In a microwave-safe bowl, combine the first eight dressing ingredients. Microwave on high for 30-60 seconds. Stir until the sugar is dissolved. Whisk in oil. Drizzle over salad; toss to coat. Sprinkle with onions.
