Sweet Azuki Bean Pie image

If you are familiar with Chinese steamed buns filled with red bean paste, you will delight in this pie. During my time learning to speak Chinese in school, I worked in a Asian food mart/Chinese restaurant. That is where I fell in love with it. This is an American rendition of an Asian favorite.

Number Of Ingredients 11

1 lb azuki beans
1/2 c butter, unsalted, room temperature
2 eggs
1/2 c sugar
1/2 c dark brown sugar
1/2 c cream or whole milk
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp ginger
1 Tbsp vanilla
1 autumn pie crust, see recipe

Steps:

  • 1. Boil beans until soft. Rinse.
  • 2. Preheat oven to 350.
  • 3. Place bean in food processor or blender with butter. Blend until smooth.
  • 4. Add other ingredients, blend for an additional minute.
