Yield 4 servings

Number Of Ingredients 4

1 pound sugar snap peas
1 1/2 ounces thinly sliced prosciutto
1 teaspoon olive oil
Freshly ground black pepper to taste

Steps:

  • Bring water to boil for peas. Trim stem ends of peas (the strings will come off with them).
  • Remove fat, and slice prosciutto into very thin strips.
  • Cook peas in boiling water for 1 to 1 1/2 minutes, depending on their size. Drain, and set aside.
  • Meanwhile, saute prosciutto in oil in nonstick pan, stirring to keep pieces separated. Cook about 1 minute, just until prosciutto begins to take on color.
  • Stir peas into prosciutto, and season with pepper.

I'm not a big fan of sugar snap peas, but I'm willing to give this recipe a try.

I served this dish over rice, but it would also be good with pasta or quinoa.

This dish is also really versatile. You can add other vegetables, such as bell peppers or mushrooms, or you can use a different type of meat, such as chicken or shrimp.

I added a little bit of garlic to the dish, and it really took it to the next level. I would definitely recommend adding garlic if you like garlic.

I used frozen sugar snap peas for this recipe, and they worked perfectly. I just added them to the skillet frozen, and they cooked through in no time.

This is a great recipe for a quick and easy weeknight meal. The peas and prosciutto cook in just a few minutes, and the whole dish is ready in under 30 minutes.

The prosciutto added a nice salty flavor to the peas, and the lemon zest brightened up the dish. I will definitely be making this again.
