Spinach Feta Succotash image

Ready to eat immediately or refrigerate and serve cold. You can use fresh or frozen corn.

2 tablespoons olive oil
1 small red onion, diced
1 medium red bell pepper, diced
1 (16 ounce) package frozen white corn kernels
1 teaspoon ground cumin
salt and ground black pepper to taste
1 (4 ounce) container crumbled feta cheese
½ cup spinach, cut into 1/2-inch pieces

Steps:

  • Heat oil in a skillet over medium heat. Cook onion and bell pepper for 2 minutes. Stir in corn and continue cooking and stirring until onion is partially translucent, about 10 minutes. Season with cumin, salt, and pepper and stir to combine.
  • Remove from heat and stir in feta cheese and spinach.
