2- 10oz pkgs. frozen spinach
(defrosted, drained, and squeezed dry)
3 eggs

1 C. flour
1 tsp. salt
1 tsp. baking powder

Steps:

  • Preheat oven to 350 spray a 9x13x2 baking pan Thaw spinach, squeeze out as much moisture as possible; set aside in a colander. Spinach will be compressed from squeezing dry. Make certain to loosen up the clumps of spinach before incorporating into the egg batter. In a large bowl; combine flour, salt, and baking powder. In a seperate medium sized bowl; beat eggs, milk, and spices. Gradually, add the beaten egg mixture into the dry ingredients stirring the whole time, getting most of any flour lumps. These were a little too dry for my taste. I think I'll add some more milk or cream next time.
