SPICY LENTIL SOUP WITH A JAMAICAN TWIST image

Number Of Ingredients 14

2 garlic clove (chopped)
1 inch piece ginger (chopped)
1 jamaican hot pepper (seeded and diced)
4 cups of vegetable broth
1 cup of water
a couple fresh thyme sprigs
5 small blue potatoes (diced)
2 large carrots (diced)
3/4 cup red split lentils
1/2 tsp jamaican curry powder
1/2 juice of a lime
Optional, sprinkle with:
cilantro
feta cheese

Steps:

  • Sautee the garlic, ginger and hot pepper on medium high for a few minutes. Add broth and water, thyme, carrot, potato, lentils and curry powder. Let cook for at least one hour. Pick out the thyme sprigs after 15 minutes. Take the soup off the heat and puree until smooth. Add the juice of half a lime. Sprinkle with cilantro and feta if desired.
